  • 1/2 diced red onion
  • 5 dill pickles diced
  • 1 green apple diced
  • 1 cup corn
  • 1 cup frozen peas

Cashew Mayo

  • 1 cup cashews
  • 1/2 cup Plant milk
  • Juice of 2 Lemon
  • 2 tsp ACV
  • 2 tbsp Capers
  • 1 Sheet Nori
  • 1 tsp Dijon
  • 1 tsp wasabi paste
  • Salt

Instructions
 

  • Crumble your tofu into a large bowl. This will be the tuna replacement along with the cashew mayo infused with flavours of the sea.
  • Dice up the rest of your salad ingredients and add them to your bowl.
  • Make your cashew mayo by blending together all of the ingredients.
  • Mix your mayo in with your salad ingredients.
