  • Steam the Broccoli

Steam in a steamer basket for 3 minutes until barely fork-tender.

  • Make the Batter

To a large bowl, add your soy milk, flax, flour, nutritional yeast, and spices and whisk well to combine.

  • Add the Veggies

Add broccoli and grated carrot and mix to combine.

  • Cook the Fritters

Heat your pan over medium heat with some olive oil. Dollop the batter into small, thin rounds onto the pan. Cook for 3–4 minutes on each side.

Recipe Tips for Broccoli Fritters

Make it Gluten-Free: You can substitute whole wheat flour for chickpea flour to make gluten-free broccoli fritters.

Don’t Oversteam the Broccoli: Steam the broccoli just until it’s barely fork-tender—about 3 minutes. Oversteaming can make the fritters too soft and watery, which may cause them to fall apart.

Let the Batter Rest: After mixing the batter, let it sit for a few minutes. This allows the ground flax to absorb the liquid and act as a binder, resulting in firmer fritters.

Use a Non-Stick Skillet: To prevent sticking and ensure an easy flip, use a non-stick or well-seasoned cast iron skillet. Add a bit of olive oil to help them crisp up beautifully.
