Prepare Smoky Tempeh Marinade

In the meantime, prepare your tempeh bacon marinade in a small container. Mix to combine.

Cook Seasoned Tempeh

Chop your tempeh into bite-sized pieces and toss in the marinade until coated well. Add your tempeh to a pan and cook for 5-7 minutes until crispy.

  • 250 g chickpea pasta
  • 1 cup halved cherry tomatoes
  • 6 cups chopped arugula
  • 1/2 red onion finely sliced

For the Tempeh Bacon

  • 1 package tempeh 227g
  • 3 tbsp low sodium soy sauce
  • 1 tbsp maple syrup
  • ½ tbsp olive oil
  • 1 tbsp smoked paprika
  • 2 tsp onion powder
  • 1 tsp garlic powder

Sunflower Seed Jalapeno Mayo

  • cup sunflower seeds
  • Juice of 1 lemon
  • 1 jalapeno with seeds removed
  • ½ clove garlic
  • 1 tsp onion powder
  • 1 tsp maple syrup
  • ¼-½ tsp salt to taste
  • 1-2 tbsp water
