Vegan Apple Pie Recipe

These apple pies were absolutely delicious and are likely much healthier than what you will get at McDonalds! They are made with puff pastry so the are light and fluffy and have a sweet and delicious caramel apple filling. They require only a few simple ingredients that you probably already have on hand! Pair them with my delicious, creamy vegan cashew icing, you can find the recipe below!

When you’re shopping for the puff pastry make sure to read the ingredients to ensure it is vegan! Many of then contain butter and/or eggs but you should be able to find vegan ones! I used the Presidents Choice brand from Loblaws, if your in the Toronto, GTA area you can find them there!

Ingredients
  

  • 1 Package of Vegan Puff Pastry

Apple Filling

  • 3 Apples Any apples will work! Use your favorite!
  • 1.5 tsp Cinnamon
  • 2 tbsp Maple Syrup
  • Dash of Salt

Vegan Egg Wash

Healthy Homemade Icing

Instructions
 

  • Set your oven to 350 degrees f
  • Finely dice your apples and add them to the pan with the maple syrup, cinnamon & salt & cook for about 10 minutes until softened.
  • Cut your puff pastry into pieces. I cut mine into 9 pieces but only ended up having enough filling for 7 of them.
  • Assemble your pies. Add vegan egg wash around the edges, add your apple filling then fold the pastry in half and seal the edges with a fork.
  • Cut 3-4 slits in the pastry so the steam can escape then transfer to a baking sheet & add more egg wash on top
  • BAKE at 350 until golden & crispy! Mine took about 40 minutes!
  • Blend the icing ingredients together. Start with 1/2 cup plant milk and add more as needed to thin.
