Sheet Pan Vegan Fajitas (High Protein)
These sheet pan vegan fajitas made with tofu are the ultimate easy weeknight dinner! They require minimal prep time and minimal kitchen tools which makes for an easy clean up! The filling is spiced to perfection and loaded with veggies and flavor! It is the perfect meal for a family or even as a meal prep!

- Spices
- Olive Oil

- Soy Sauce
- Bell Peppers
- Zucchini
- Red Onion
- Lime
- Cilantro
- Jalapenos
- For the fajitas: soft shell tacos & vegan sour cream
How to make sheet pan vegan fajitas
This is the easiest vegan fajitas recipe you will ever make! All you need to do is chop up your ingredients, season and toss in the oven!
Press your tofu. Make sure to press your tofu so it can crisp up and absorb all of the delicious flavor! Press for a minimum of 15 minutes using a tofu press (affiliate link) or by wrapping it in a kitchen towel and placing a heavy object on top.
Prepare your veggies. Cut your veggies into slices and add them to a lined baking tray. Season with your spices, salt and pepper and toss to coat.
Slice and season your tofu. Once the tofu is pressed, slice it into strips. Move your veggies to the side of the pan and to the other add on your slices tofu. Season your tofu and toss to coat with your hands.
Bake your sheet pan fajitas! Spread out the veg and tofu evenly and bake at 400f for 35-40 minutes!
Assemble your fajitas with some soft shell tortillas, guacamole, vegan sour cream or any other toppings you’d like and enjoy!
How to eat your sheet pan vegan fajitas
As fajitas, tacos, or in a burrito! This sheet pan dish is the perfect stuffer for fajitas, tacos or burritos! You can use soft or hard shell and add in some of your favorite toppings!
In a burrito bowl or nourish bowl. This sheet pan dinner can be used in your fav nourish bowls with a side of rice or crispy potatoes! Add in your fav sauce, some guacamole, some greens and extra veg!
Enjoy your sheet pan dinner by itself as a low carb meal option! It is loaded with flavor and so delicious on its’ own!
On top of a pizza! These Mexican style veg and tofu would taste great on top of a pizza! Add on some vegan cheese and tomato sauce and enjoy!

Switch up the veggies! For this sheet pan I used zucchini, bell peppers, and red onion but feel free to use any veg you have in your fridge! It’s a great way to get rid of those veggies in the back of your fridge!
How to make your tofu crispy! To make crispy tofu always use extra firm tofu and press it using a tofu press (affiliate link) or by wrapping it in kitchen towel and placing heavy objects on top. It is also important to use cornstarch in the seasoning mix as this also helps the tofu get nice and crispy!
Try some additional toppings for your fajitas! I love adding some fresh guac, refried beans, tomato and cilantro for some extra freshness and flavor!
Use a store bought fajita seasoning! If you want to make this meal extra simple you can season your tofu and veg with a store bought taco or fajita seasoning! Just make sure to add in some cornstarch when seasoning the tofu!
Make it oil free! You can easily omit the oil to make this recipe oil free or swap it with some veggie broth!
Make it gluten free! This vegan fajitas recipe is naturally gluten free but to make sure it is 100% gluten free use a gluten free tamari or soy sauce and serve with corn tortillas or rice!
Omit the soy! To make this recipe soy free simply swap the tofu for some chickpeas or another mock meat of your choice.

Ingredients
For the Veggies
- 1 Red Onion
- 1 Yellow Bell Pepper
- 1 Green Bell Pepper
- 1 Orange Bell Pepper
- 1 Zucchini
- 2 tsp Olive Oil
- ½ tsp Garlic Powder
- 1 tsp Onion Powder
- ½ tsp Chili Powder
For the Tofu
- 1.5 Blocks Extra Firm Tofu 600g
- 1.5 tbsp Soy Sauce
- 1.5 tsp Cornstarch
- 1.5 tsp Chili Powder
- 1.5 tsp Cumin
- 1.5 tsp Smoked Paprika
Cashew Sour Cream
- 1 cup Cashews
- ½ cup Water
- 1.5 tbsp Apple Cider Vinegar
- 1 tbsp Lemon Juice
- ¼ tsp Salt
For Assembly
- 15 mini Tortillas
- Fresh Lime
- Fresh Chopped Cilantro
- Sliced Jalapeno
Instructions
- Start by slicing your veggies into strips.
- Place onto a lined baking tray and toss in olive oil, spices and salt and pepper.
- Toss with your hands then push the veggies to one side of the baking sheet.
- Slice your tofu into thick strips then place onto the free side of the baking sheet.
- Toss in soy sauce, cornstarch and seasonings and toss with your hands to combine.
- Mix your veggies and tofu together and spread evenly over the baking tray.
- Bake at 400f for 35-40 minutes.
- While your fajitas cook make your cashew sour cream.
- Add everything to a blender and blend until smooth.
- Serve on top of mini tortillas, top with your cashew sour cream, chopped cilantro, jalapeno and finish with a squeeze of lime.
