First, Make your tofu. Slice the tofu into cubes, then transfer them into a bowl. Season with soy sauce and mix to combine, then add in your nutritional yeast and cornstarch and toss again. Air fry at 400f for 15 minutes or bake at 425 for 25-30.
Cook Veggies
Next, cook your veggies. Add your onion to a pan over medium heat and sauté until soft, then add in your garlic and ginger and stir for 1 minute to toast. Add in the rest of your veggies, except for your Bok choy, and cook for a further 8-10 minutes.
Once the veggies are cooked, add in your Bok choy and cook for another 3-4 minutes or until the book choy is wilted.
Prepare Vegan Sauce
Prepare your vegan sauce by mixing sesame oil, soy sauce, coconut aminos, and rice wine vinegar. Add to your veggies.
Boil Noodles

Ingredients
For the Tofu
- 2 blocks of extra firm tofu
- 2 tbsp reduced sodium soy sauce
- 1/2 cup nutritional yeast
- 2 tbsp cornstarch
For the Noodles, Stir fry
- 550 g noodles
- 1 onion
- 1 inch cube of grated ginger
- 4 cloves garlic
- 1 carrot sliced into matchsticks
- 2 bell peppers sliced into matchsticks
- 3 cups sliced mushrooms
- 1.5 cups snap peas halved
- 7 cups chopped bok choy
Vegan Stir-fry sauce
- 2 tbsp sesame oil
- 4 tbsp reduced sodium soy soy sauce
- 1/3 cup coconut aminos
- 3 tbsp rice wine vinegar
For topping
- Green Onions
- Sesame Seeds
- Sriracha
- Lime
