Next, cook your veggies. Add your onion to a pan over medium heat and sauté until soft, then add in your garlic and ginger and stir for 1 minute to toast. Add in the rest of your veggies, except for your Bok choy, and cook for a further 8-10 minutes.

  • 550 g noodles
  • 1 onion
  • 1 inch cube of grated ginger
  • 4 cloves garlic
  • 1 carrot sliced into matchsticks
  • 2 bell peppers sliced into matchsticks
  • 3 cups sliced mushrooms
  • 1.5 cups snap peas halved
  • 7 cups chopped bok choy
