Vegan Duck Pancakes with Tofu

These vegan duck pancakes are loaded with veggies and protein and are so simple to make! These pancakes are a spin on peking duck pancakes, but are made with marinated tofu instead of duck! They are salty, sweet and topped with a tangy vegan sriracha mayo!

How to make your vegan duck pancakes

This vegan peking duck recipe is so simple and only requires a few steps:

First, prepare your tofu. Make sure to use extra firm tofu and press it to ensure some of the liquid is removed. This will ensure that the tofu can absorb all of the delicious flavors from the marinade and will help the tofu crisp up! You can use a tofu press or wrap your tofu in a kitchen towel and place some heavy objects on top. Press for at least 15 minutes. Once pressed slice your tofu into small, flat squares.

Make your marinade. Grab a leak proof container and add in the ingredients for the marinade. Shake to combine then add in your sliced tofu. Let your tofu marinate for at least 5 minutes, or as long as overnight!

Pan fry your tofu over medium heat for a few minutes on each side until golden.

Next, spread on some hoisin sauce onto a whole wheat tortilla along with your vegan pecking duck (cooked tofu). Fold your tortilla in half and pan fry until crispy on both sides.

While that is crisping up prep the veggies for the filling. You’ll need cucumber, carrots, chives or green onions, cilantro and sriracha mayo! Add your toppings inside of your pancake and enjoy!

Make it ahead of time! You can prep your tofu ahead of time and let it marinate over night!

Make it gluten free! You can make this recipe gluten free by using gluten free tortillas and a gluten free soy sauce or tamari.

Can’t have soy? Try making your vegan peking duck with seitan or mock chicken and use coconut aminos instead of soy sauce.

Use a bao bun! Usually peking duck is served in a bao bun! They can be harder to find so I used a tortilla! instead!

Use a whole wheat tortilla for your vegan duck recipe! It adds in a ton of extra whole grains and will keep you full for longer!

Try making your duck pancakes recipe with small tortillas! You can make little handheld sizes for appetizers!

Make sure your hoisin sauce is vegan! Many of them can have fish products in them so make sure to check the label!

Make your own sriracha mayo! All you need to do it mix vegan mayo and sriracha together!

Ingredients
  

For the Tofu Marinade

For the Pancake

  • 2 Whole Wheat Tortillas
  • Hoisin Sauce
  • Cucumber ribboned
  • Carrots ribboned
  • Chives or Green Onion
  • Chopped Cilantro
  • Vegan Sriracha Mayo make your own by mixing vegan mayo with sriracha to taste!

Instructions
 

  • Press your tofu and slice it into small, flat squares.
  • Add the marinade ingredients into a container and shake to combine. Add in the tofu, shake to coat and marinate for at least 5 minutes, or overnight.
  • Pan fry your tofu over medium heat for a few minutes until golden.
  • Spread hoisin sauce over your tortillas then add your tofu to one side. Fold the tortilla in half and pan fry until crispy on both sides.
  • Prep your veggies and add them in the middle of the pancake along with some vegan sriracha mayo and enjoy!
