Baked Vegan Taquitos with Avocado Cilantro Lime Dip

How to make your vegan taquitos

Prep your veggies. Slice up your onions and peppers and gather the rest of your ingredients.

Sauté your onion until translucent then add in your garlic and chopped bell peppers and cook for a few more minutes.

While that is cooking grate your tofu! You’ll want to use extra firm pressed tofu here to ensure the tofu has minimal liquid. You can press your tofu using a tofu press or by wrapping it in a kitchen towel and placing heavy objects on top. Press your tofu for at least 15 minutes. Grate your tofu with a cheese grater then add it on top of your veggies along with your seasoning, tomatoes and salt. Mix to combine.

Make a cashew cream by blending raw cashews and water together until smooth and creamy. Add that into your pan along with some chopped cilantro and fresh lime and mix until everything is incorporated.

Next, add your filling into a small tortilla and wrap it tight into a roll.

Place your rolled tortillas side by side in a greased baking dish, brush with olive oil and bake at 400f for 20-25 minutes until golden.

While your vegan taquitos are in the oven make your dip. Add the ingredients into a blender and blend until smooth.

With some vegan sour cream! You can make some by blending together 2 cups cashews, 1 cup water, 3 tbsp apple cider vinegar, 2 tbsp lemon juice and half a tsp of salt.

Topped with some salsa. I topped these vegan taquitos with a simple salsa made with tomatoes, onions, cucumber, lime juice, jalapenos and cilantro! It adds a wonderful freshness to the meal!

With a guacamole! Make a simple one on the side or throw it on top!

Serve your taquitos as a pyramid or lay them out on a plate. Arranging them as a pyramid is very aesthetically pleasing as you can load a heap of toppings on top, but you can also serve everything separately!

Some tips from Steph

Make it gluten free! You can make your vegan taquitos gluten free by using corn tortillas!

Swap the hemp seeds in the dressing for raw cashews! Just make sure to soak them first if you don’t have a high speed blender!

Use corn or flour tortillas for your taquitos! If using corn tortillas it is best to microwave them with a wet towel first so they do not crack!

Make it soy free! Make your taquitos soy free by swapping out the tofu! You can try making vegan black bean taquitos or vegan chicken taquitos by using a mock meat! If using beans, try mashing them up to get a different texture!

Use the air fryer! If you do not have an oven you can certainly use an air fryer, it may just take a few batches depending on how large your air fryer is! Air fry at 400f for 15 minutes until golden!

Ingredients
  

For the Taquitos

  • 12 Mini Tortaiilas
  • ½ Onion
  • 3 cloves Garlic
  • 1 small Green Bell Pepper
  • 1 small Orange Bell Pepper
  • 1 400g Package Extra Firm Tofu pressed and shredded
  • ½ can Fire Roasted Tomatoes or ½ cup tomato sauce
  • 3 tbsp Taco Seasoning I used a mixture of smoked paprika, cumin, onion powder, garlic powder and chili powder
  • Handful of Cilantro
  • Juice of 1 Lime

For the Cashew Cream

For the Avocado Cilantro Lime Dip

  • 1 Avocado
  • 1 Jalapeno deseeded
  • Handful of Cilantro
  • ¼ cup Hemp Seeds
  • Juice of 1-2 Limes
  • 1 clove Garlic
  • 1 tsp Maple Syrup
  • 3-4 tbsp Water or Plant Milk to Thin

For Topping

  • Sauté your onion until translucent over medium heat then add in the garlic and bell peppers and cook for a few more minutes.
  • Press your tofu and shred it with a cheese grater (or crumble it with your hands).
  • Add your tofu into the veg mixture along with the fire roasted tomatoes and taco seasoning.
  • Make your cashew cream by blending together the raw cashews and water until smooth. If you do not have a high speed blender make sure to soak the cashews in boiling water first for 15 minutes.
  • Mix your cashew cream in and add in a handful of chopped cilantro and the juice of 1 lime. Mix to combine.
  • Add the tofu mixture into your tortillas and roll them up nice and tight!
  • Place your rolled taquitos into a greased baking dish side by side so they do not unravel and brush on some olive oil for color (or omit for oil free).
  • Bake at 400f for 25-30 minutes until golden.
  • In the meantime make your avocado cilantro dip by blending together all of the ingredients.
  • Once the taquitos are golden and crispy take them out and serve! You can serve them like a pyramid and add some toppings on top or serve everything separately with sides of guacamole & salsa!
