HOW TO MAKE FREEZER BREAKFAST SANDWICHES

PREPARE YOUR MARINADE

Make your tofu marinade by adding the soy sauce, maple syrup, olive oil, liquid smoke, and spices to a large bowl or container. Mix to combine.

PREPARE THE TOFU

Press your tofu, slice it into strips, and toss in the marinade. Let marinate for at least 5 minutes, but the longer, the better.

PREHEAT THE OVEN AND PUT IN THE TOFU

Preheat the oven to 400 degrees F. Place the tofu on a baking tray and bake for 30 minutes, flipping halfway through.

ASSEMBLE YOUR BREAKFAST SANDWICHES AND FREEZE

Assemble your breakfast sandwiches by dividing your tofu across five English muffins and adding a slice of vegan cheese. Wrap in foil or parchment paper and store in the fridge or freezer until you’re ready to enjoy.

RECIPE TIPS FOR FREEZER BREAKFAST SANDWICHES

Make it gluten-free: Try Tamari and gluten-free bread.

Extra fiber: Use whole wheat muffin for extra fiber

Make it soy-free: Use another plant-based mock meat alternative or sub for soy-free tofu, such as fava bean tofu.

Make it oil-free: Omit the oil.

Don’t want to use the oven: You can pan-fry your tofu in batches or air fry in batches. If air frying, use 400f for 15 minutes

Keep it crispy: Make sure not to crowd the tofu when baking, or it won’t crisp up.

REHEATING INSTRUCTIONS

My favorite and fastest method – Remove the foil and microwave for 5 minutes to defrost, then air fry for 7 minutes until crispy.

Air Fryer – 350f with foil for 10 minutes and without for 4 to make them nice and crispy! 

Oven – 400f with foil for 15-20 minutes. Remove foil and cook for a further 5 minutes to make them nice and crispy.
