This beet chickpea smash will be your new favorite summer sandwich! It is fresh, easy to make and a fun twist on your usual chickpea mash recipes! Make it in under 10 minutes in one bowl! The smash is drizzled wit a balsamic glaze, topped with avocado and lettuce and loaded with flavor!

  • Beets
  • Red Onion
  • Lemon Juice

How to make a beet chickpea smash

Add your ingredients into a large bowl. Roughly chop the beets, finely dice the red onion and add in some lemon juice, fresh chopped mint and some salt and pepper to taste.

How to mash chickpeas and beets. Once all your your ingredients are added to your bowl mash your mixture with a potato masher, a mortar and pestle or with the back of a fork until everything is well combined.

Assemble your sandwich with sliced avocado, lettuce, tomato and a balsamic glaze.

Make it gluten free by using a gluten free bread. The smash itself is naturally gluten free!

Get pre-cooked beets. You can buy pre cooked beets in a package to make your life a little easier or you can roast or boil them yourself!

Add an extra health boost by adding some fresh sprouts in the sandwich!

Make your own balsamic glaze if you can’t find any at the store, you can find some here or make it at home. Just boil down some balsamic vinegar and sugar until it becomes nice and thick.

Beet Chickpea Smash Sandwich

This beet chickpea smash will be your new go to sandwich recipe! It is so easy to make and comes together in 10 minutes or less! This sandwich is packed with flavor with a kick of mint and a balsamic glaze! It is so simple, yet so flavorful!

Ingredients
  

For the Smash

  • 2 small Beets roughly chopped
  • ¾ cup Chickpeas
  • ½ Small Red Onion finely diced
  • Juice of 1-2 Lemons
  • Handful of Fresh Mint roughly chopped
  • Salt & Pepper to Taste

To Top the Sandwich

  • 4 slices Whole Wheat Bread
  • 1 large Avocado sliced
  • 3 Pieces of Lettuce
  • 1-2 tbsp Balsamic Glaze

Instructions
 

  • Add all of the ingredients for the smash into a large bowl. Mash everything together until combined using the back of a fork, a potato masher or a mortar and pestle.
  • Assemble your sandwich with avocado, tomato, lettuce and a balsamic glaze.
  • If you cannot find a balsamic glaze at the store you can make your own by boiling down some balsamic vinegar and sugar.
