Stretchy Vegan Mozzarella Cheese
This stretchy vegan mozzarella cheese is the best dairy free cheese alternative. It is made with seven simple ingredients and is finished in under 10 minutes! This mozzarella is stretchy, melty and perfect for grilled cheese, poutine and pizza! It is the perfect whole foods alternative to cheese!
What ingredients do I need for my vegan mozzarella cheese?
- Cashews
- Almond Milk
- Nutritional Yeast
- Lemon Juice
- Apple Cider Vinegar
- Tapioca Starch
- Salt
How to make vegan mozzarella cheese
The vegan chees is so simple to make you’ll be done in less than 10 minutes!
Start by blending together your ingredients. Add all of the ingredients into a high speed blender or food processor and blend until completely smooth. I used my Vitamix for this – Click here for the Vitamix I use!
Soak your cashews. If you do not have a high speed blender. Soak your cashews for 15 minutes in boiling water or 6 hours in room temp water.
Bring to a gentle simmer in a small pot and whisk continuously. The cheese will begin to thicken, just keep mixing until it becomes stretchy and melty.
Serve right away or store in the fridge to enjoy later!
Will my non vegan friends and family like this?
I am not going to lie, this cheese does not taste exactly like real mozzarella, but it is a great whole foods vegan substitute for mozzarella cheese! It has a cheesy, salty flavor and a stretchiness just like real cheese! It has a similar flavor profile to mozzarella so your friends and family will still love it! Just keep in mind it does not taste exactly the same.
How to eat your vegan mozzarella cheese
On a grilled cheese! My favorite way to eat this vegan mozzarella cheese is on a pesto grilled cheese! I make my own homemade pesto by blending together walnuts, cashews, basil, lemon juice, olive oil, salt and pepper until the pesto is coarse. Spread that pesto on with some bread with your mozzarella and pan fry until golden!
Use your vegan mozzarella for pizza! This cheese would go great on some homemade pizza loaded with your favorite veggies and pizza toppings!
On a Canadian Poutine! This is the best vegan mozzarella cheese to use for a vegan poutine! Find my recipe for vegan poutine here! It is the perfect substitute for cheese curds, and that’s coming from me, a certified born and raised Canadian!
As a dip! This mozzarella cheese works great as a cheesy dip with tortilla chips! Just remove 2 tbsp of tapioca starch so the cheese will be more runny and dippable!
Some tips from Steph
Make it nut free! Although I have not yet tried it myself you should be able to sub the cashews with hemp seeds or 200g of silken tofu, or a mix of both!
Store it! This vegan mozzarella cheese stores well in the fridge for up to one week in an air tight container! Keep it in the fridge and use it for your grilled chesses throughout the week!
Soak your cashews if you do not have a high speed blender. I used Vitamix and blended without soaking and it was completely smooth, but if your blender is not very strong it is best to soak your cashews for 15 minutes in boiling water or in room temp water overnight.

Ingredients
- ½ cup Cashews
- 1 cup Almond Milk or other plant milk
- Juice of half a lemon
- 1 tbsp Apple Cider Vinegar
- ½ cup Nutritional Yeast
- ¾ tsp Salt
- 6 tbsp Tapioca Starch
Instructions
- Add all of your ingredients into a high speed blender or food processor and blend until completely smooth.
- If you are not using a high speed blender make sure to soak your cashews before hand, You can soak them in boiling water for 15 minutes or in room temp water for 6 hours, or overnight.
- Add your blended cheese mixture into a pot and bring to a gentle simmer, whisking continuously. The cheese will thicken, just keep whisking until it is stretchy and melty!
