Creamy Cowboy Caviar with Jalapeno Cilantro Lime Sauce
This creamy cowboy caviar is the ultimate shareable snack! It is loaded with veggies, legumes and healthy fats, making it the perfect filling snack! It is tossed in a creamy jalapeno cilantro lime sauce, adding a touch of heat and a whole lot of flavor! This is a perfect swap for a guacamole if you’re wanting to switch up your appetizer game and can be eaten as a healthy lunch or snack as well!

How to make your creamy cowboy caviar
This Texas cowboy caviar is SO simple to make! Here’s how to do it:
First gather all of your ingredients and chop up your veggies. I like to chop them into small uniform pieces to make it easy for dipping! Add your veggies into a large bowl.
Next, open and strain your cans of beans. I used black eyed beans and black beans, which is typical of a cowboy caviar dip, but you can add in any beans or legumes you’d like! Rinse your beans under cold water in a strainer to remove any of the liquid they were stored in, then add them into your bowl.
Now make your creamy dressing. Just add all of the ingredients into a high speed blender and blend until completely smooth.
Combine your dressing with the dip and mix until everything is completely coated.
Serve and enjoy!

Make it nut free! You can make your creamy dressing nut free by swapping the cashews for extra hemp seeds, silken tofu or sunflower seeds. The tofu would not make the sauce as creamy but would reduce the amount of fat!
Use a high speed blender. If you do not have a high speed blender make sure to soak your cashews in boiling water for 10 minutes to soften them. This will ensure the sauce comes out nice and creamy without any lumps!
Switch up the veggies! You can add in any veggies you have on hand or any of your favorite beans or legumes!
Make it ahead of time! You can make this cowboy corn caviar ahead of time and whip it out the day you need it! If you’re making it ahead of time just keep the dressing separate and mix it in the day you’d like to enjoy it!

How to eat your creamy cowboy caviar
As a dip! You can use this creamy Texas cowboy caviar as a dip with some tortilla chips, rice crackers, pita, or with some lettuce cups for a grain free option!
As a salad! This cowboy caviar is amazing on its own! You can eat it with a spoon right out of the bowl.
As a stuffer for your burritos or wraps! This would make a delicious addition to your handheld snacks! It adds a ton of flavor and creaminess eliminating the need for dressing!

Storing your cowboy caviar
You can store your dip in the fridge in an air tight container for up to 5 days! If you’d like to make your caviar in advance I’d recommend storing the dressing and veggies separately and mixing them together the day you’d like to serve. This way it tastes as fresh as possible! Leftovers in sauce will last in the fridge for up to 5 days!

Creamy Cowboy Caviar with Jalapeno Cilantro Lime Sauce
Ingredients
For the Caviar
- 1 14oz can Black Beans
- 1 14oz can Black Eyed Beans
- 1 Red Bell Pepper
- 1 Orange Ball Pepper
- 1 Large Tomato
- 1 cup Corn I used canned, but fresh cooked corn would work as well.
- ¼ Red Onion
- 1 Jalapeno, seeds removed
- 1 Avocado
For the Creamy Cressing
- ½ cup Raw Cashews
- ½ cup Hemp Seeds
- Large Handful Cilantro
- 1 clove Garlic
- Juice of 2 lemons or Limes
- 1 Jalapeño, seeds removed
- ⅓ cup Plant Milk
- 1½ tsp Cumin
- ½ tsp Chilli Powder
- Salt and Pepper to Taste
Instructions
- First gather your veggies and chop them up into uniform pieces, about the size of a bean. Finely dice your red onion.
- Add your veggies into a large bowl.
- Strain your canned corn and beans and rinse them under cold water to remove any of the liquid they were stored in.
- Add your beans and corn into the bowl with your veggies and toss to combine.
- Next make the creamy dressing. Add all of the ingredients into a high speed blender and blend until completely smooth.
- If you do not have a high speed blender it is best to soak the cashews in boiling water for 10 minutes so that the dressing comes out nice and creamy without any lumps!
- Add your dressing into the bowl and mix well to combine!
