  • Plant Milk
  • Banana
  • Vanilla
  • Maple Syrup
  • Peanut Butter
  • Baking Powder
  • Salt
  • Raspberries
  • Chia Seeds
  • Dark Chocolate (optional topping)
  • Powdered Peanut Butter (optional topping)

How do you make PB & Jelly Stuffed Baked Oats?

These peanut butter jelly stuffed baked oats are just as simple to make as regular oats and require only 5 minutes of prep time! All you need to do is blend the ingredients together to form the batter then pour half the mixture into a ramekin! For the stuffed jam filling add your fresh or frozen berries and chia seeds into a bowl and microwave for 45 seconds. This creates an ooey gooey healthy jam. Alternatively if you don’t have a microwave you can add them to a small saucepan and cook over medium heat for a few minutes. Add your filling into the ramekin and then pour the rest of the batter on top. Top with chocolate chips, peanuts or more berries and bake for 25 minutes!

Additions & Substitutions:

  • Rolled Oats can be subbed for quick oats.
  • Any plant milk will work (almond, coconut, oat, etc.).
  • Sub 1/2 a banana for 1/4 cup apple sauce.
  • Peanut butter can be subbed for any nut butter or powdered peanut butter for a higher protein option (you may need to add a splash more plant milk).
  • Sub the raspberries for strawberries or blueberries!
  • Top the baked oats with dark chocolate or peanuts, before baking.
  • Top the baked oats with more fruit, powdered peanut butter, coconut yogurt or maple syrup after baking!

These stuffed baked oats taste like cake for breakfast! It is stuffed with a healthy raspberry chia jam filling and loaded with peanut butter flavor!

Ingredients
  

Baked Oats Batter

Easy Chia Jam

  • 1/2 cup Raspberries fresh or frozen
  • 1 tsp Chia Seeds

Instructions
 

  • Blend up the oats, plant milk, banana, vanilla, maple syrup, peanut butter, baking powder & salt.
  • Microwave the raspberries & chia seeds in a bowl for 30 seconds. You could also cook them on a stove top over medium heat for a few mins.
  • Pour half of the batter into a ramekin then add in your chia berry jam and add the rest of the batter on top.
  • Top with chocolate chips or peanuts (optional) and BAKE at 350 degrees f for 25-30 minutes.
