These mini pecan pies are ultra gooey, naturally sweetened and nutty. They take less than 20 minutes to make and you can keep them in the freezer for months so you always have a healthy dessert on hand!

How to make your salted caramel pecan pie tarts
These easy mini pecan pie tarts are SO simple and take less than 20 minutes to make!
First grab a high speed blender or food processor! I used my Vitamix for this recipe and it worked perfectly!
Make the crust by adding your pecans, oats, maple syrup and salt into your blender. Pulse until it becomes a fine meal. You should be able to mold the crust with your hands.
Divide the crust into 6 muffin tins and push the crust up the edges and pack it down tightly. Make a well in the center so you can put your filling inside. Set your mini pecan tarts in the fridge while you make the filling.
Next make the filling by adding your dates, water, cinnamon, vanilla and maple syrup into your blender and blend until the dates have becomes nice and gooey. Add in the remainder of the pecans and pulse until they are in tiny pieces.
Add the filling on top of the crust and top with a pecan – and optional – some desiccated coconut.
Let your mini pecan pie tarts set in the freezer for at least 2 hours to firm up and take them out 10 minutes before you’d like to enjoy!


Some tips from Steph
Use a high speed blender or food processor! I used my Vitamix for this recipe and it worked perfectly. It is important to use a high speed appliance because nuts and dates are hard to blend through and may put too much strain on a weaker blender.
Make it sweeter! I find that the dates provide more than enough sweetness but if you have a huge sweet tooth you can add in some extra maple syrup to the filling!
Make them ahead of time! The best thing about this pecan pie tart recipe is that you can make it ahead of time and store it in the fridge or freezer until you’d like to serve them! If you store them in the freezer just make sure to take them out 10 minutes before you’d like to serve them!
Store them in the freezer for up to 3 month so you always have a healthy dessert on hand!
Make them into even smaller tarts! you could use this recipe to make even smaller tarts using small muffin tins to have little bite sized pecan pie tarts!

Salted Caramel Pecan Pie Tarts {NO BAKE}
Ingredients
For the crust
- 1½ cup Pecans
- 1½ cup Rolled Oats
- ¼ cup Maple Syrup
- ¼ tsp Salt
For the Filling
- 1 cup Tightly Packed Medjool Dates
- ⅓ cup Water
- 1 tsp Vanilla
- ½ tsp Cinnamon
- 1 cup Pecans
Instructions
- Grab a high speed blender or food processor and start by making the crust. Add the crust ingredients into your blender and pulse until a fine meal is formed.
- Divide the crust into 6 greased muffin tins and pack it down into the tins, pushing the crust up the sides. Let your crust sit in the fridge while you make the filling.
- For the filling add the dates, water, cinnamon and vanilla into your blender (no need the wash in between) and blend until the dates are nice and gooey. Add in the remaining pecans and pulse until they have broken into tiny pieces.
- Add the date filling into your crusts and top with an extra pecan and desiccated coconut (optional).
- Let your tarts set in the freezer for at least 2 hours and take them out 10 minutes before you'd like to serve them!
