Easy Apple Pie Spring Rolls made in the Air Fryer

These apple pie spring rolls are the easiest way to make an apple pie! They are ultra crispy and filled with ooey gooey apples coated in an ultra sweet date caramel! These rolls are much healthier than your typical apple pie! They are made with mostly whole foods, and are made in the air fryer for ultimate crispiness! They are sweetened naturally with dates and are completely refined sugar free! This will be your new favorite way to make apple pie! They are perfect for sharing and are so simple to make!

What ingredients do I need for my apple pie spring rolls?

  • Vegan Spring Roll Wrappers
  • Apples – I like honey crisp
  • Cinnamon
  • Lemon Juice
  • Medjool Dates
  • Vanilla

How to make apple pie spring rolls

These apple pie rolls are so easy to make you will never want to make an apple pie again!

Sauté your apples. Chop your apples into small cubes then add to a pan over medium heat along with the juice of one lemon and 2 teaspoons of cinnamon. Let that cook for about 5-10 minutes until the apples have caramelized.

Make the date caramel while your apples are cooking. To a small blender add your medjool dates, water and vanilla and blend until completely smooth. Add the caramel to your apples and cook for a further few minutes.

Assemble your apple pie spring rolls. Use two layer of spring roll wrapper so they do not fall apart. Place the apple mixture in the center then roll up the bottom, then the two sides, and finally the top.

Brush with oil on both sides, coating completely. If you do not want to use oil you can use a vegan egg wash using equal parts maple syrup and plant milk.

Air fry your apple pie rolls at 400 degrees for 12-14 minutes flipping halfway through. You’ll know they are done once they are golden and crispy!

What makes this healthier?

These air fried apple pie spring rolls are a much healthier option to apple pie! They are made with minimal ingredients and are refined sugar free! These apple pie rolls are super filling and made with minimally processed ingredients. The spring roll wrappers are also very thin, so you are consuming much less dough than in a classic apple pie!

Some tips from Steph

Choosing your dates. I like to use medjool dates. I find they are the most caramelly and gooey, and produce the best date paste. You can use other dates if you cannot find them but if your dates are dry make sure to first soak them in boiling water for 10 minutes.

Baking instructions. To make baked apple pie spring rolls you can bake for 15-20 minutes until golden at 400f. Make sure to flip them halfway through so all sides get nice and crispy!

Make it oil free! To make your apple pie spring rolls oil free you can sub the oil with a vegan egg wash. Just mix equal parts plant milk and maple syrup and use this in place of the oil. Just keep in mind the spring roll wrappers may have oil in them, so check for this if you are strictly oil free!

Make sure to double roll! The spring roll paper will fall apart if you only use one paper. Make sure to use two sheets!

Make it a low calorie option. To make your apple pie rolls lower in calories you can omit the date caramel and sub in a few table spoons of maple syrup. The apples will not be as gooey but it is a great option if you need a low calorie dessert!

Make them Gluten Free! You can make these gluten free by using rice paper instead of spring roll wrappers! Just make sure to use a double layer!

Easy Apple Pie Spring Rolls made in the Air Fryer

These apple pie spring rolls are better than apple pie! They are ultra crispy and stuffed with an ooey gooey caramel apple date filling. These air fried apple pie rolls are so easy to make and are also vegan and refined sugar free! They are such an easy go-to healthier dessert option!

Ingredients
  

  • 2 Apples I like honey crisp, but any apples wil work!
  • 2 tsp Cinnamon
  • Juice of 1 Lemon
  • 8 Medjool Dates
  • ¼ cup Water
  • 1 tsp Vanilla
  • 8 Spring Roll Wrappers see notes for gluten free
  • tbsp Olive Oil for brushing. See notes for oil free

Instructions
 

  • Dice your apples into small cubes then pan fry for 5-10 minutes over medium heat along with the lemon juice and cinnamon. Add splashes of water as needed to de glaze the pan.
  • While the apples are cooking make the date caramel. Add the dates, water and vanilla into a small blender and blend until smooth. Add the caramel to the apples and mix until the apples are all coated.
  • Assemble your apple pie spring rolls using two sheets of spring roll paper.
  • Place the apple mix in the center then roll up the bottom, the two sides and lastly the top.
  • Brush both sides of the roll ups with oil or a vegan egg wash (see notes for oil free).
  • Air fry at 400 degrees for 12-14 minutes flipping halfway through.
  • If using an oven bake at 400 degrees f for 15-20 minutes, flipping halfway through.
  • Dip in your favorite icing and enjoy!
  • I made this icing by mixing together some vegan vanilla protein powder & water to thin.

Notes

For Gluten Free sub spring roll wrappers with rice paper. Just make sure to use two layer so they don’t fall apart!
For oil free sub oil for a vegan egg wash. Mix equal parts maple syrup and plant milk. The spring roll wrappers may contain oil as well so for completely oil free use rice paper wrappers!
