Vegan Banana Bread Recipe

I was determined to make the perfect healthy banana bread recipe. When I looked at other vegan banana bread recipes before I made this, they were all PACKED with oil and added sugar! After testing this bread multiple times I finally perfected the recipe! You will not believe how delicious this banana bread is! And it is so healthy you can have it every day! It’s packed with whole grains, dairy free, refined sugar free, gluten free and soooo filling!

This recipe is perfect if you have a bunch of overripe bananas that you don’t know what to do with. You can make it at the beginning of the week and keep it in an airtight container in your fridge for up to 8 days! I ate this cold out of the fridge and it was still delicious!

For a Sweeter Banana Bread: Add 1/4 cup maple syrup to the wet ingredients.

To Make Your Own Oat Flour: Blend rolled oats in a blender until you reach a fine flour consistency.

Optional Add Ins: I added dates & walnuts in the bread, but you can also add chocolate chips if your not going refined sugar free! I also topped the banana bread with a sliced banana. This was mostly for aesthetics, but does add a little more banana flavor. You can omit if you don’t have enough bananas!

Storage: Store in the fridge in a sealed container for 8 days. This banana bread tastes great cold!

Apple Sauce: If you need a refined sugar free bread make sure to read the ingredients to ensure there is no added sugar.

How to Make a Flax Egg: Add 2 tbsp of ground flax and 5 tbsp warm water to a small bowl. Mix and let sit on the counter for 10-15 minutes. It should come together and become thick.

Healthy Vegan Banana Bread {gluten free}

This moist and fluffy vegan banana bread is so delicious you will not believe it is healthy! This bread is made with whole foods and is completely oil and gluten free, and has no added sugar! It is the perfect healthy breakfast or snack on the go and requires less than 10 minutes of prep time!

Ingredients
  

  • 1+1/3 cup Mashed Banana (320g) About 3-4 bananas** do not go over this or the bread will be gummy!
  • 1 Extra Banana for topping This is optional
  • 2 Flax Eggs 2 tbsp flax + 5 tbsp warm water, mixed and left to sit for 10 minutes
  • 1/3 cup Apple Sauce Check ingredients for no added sugar
  • 2 tsp Vanilla
  • 1+1/3 cup Oat Flour
  • 1/2 cup Oats
  • 3/4 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • ½ tsp Salt

Instructions
 

  • Preheat your oven to 350f and make your flax eggs.
  • To make your flax eggs mix 2 tablespoons of ground flax with 5 tablespoons of water. Let that sit for 10-15 minutes to thicken.
  • Add your bananas to a large bowl and mash them well. I weight out 320g of bananas but you can measure out 1+1/3 cups. Make sure to not go over this or your banana bread will be gummy.
  • Add in the wet ingredients and mix to combine.
  • Add your dry ingredients on top and mix again. Fold in your chopped walnuts and vegan chocolate chips.
  • Transfer your batter into a greased or lined loaf pan. I like to top my banana bread with an extra banana sliced lengthwise and some extra walnuts and chocolate chips.
  • BAKE at 350 f for 1 hour – 1 hour 15 min until the bread has darkened and has a nice crust on the outside. The bread should be crispy and golden on the outside and moist on the inside.
  • You'll know it is done when you can stab it with a toothpick and it comes out clean!
  • Enjoy as is or melt on some vegan butter.
