If you are the type of person who LOVES eating raw cookie dough this recipe is for you! This vegan cookie butter tastes just like real cookies, but in a smooth and creamy texture! Try no to eat it all out of the jar by the spoonful, I dare you!

How do you make this cookie butter?

This vegan cookie butter takes 5 minutes of active prep time to make! Just add the ingredients to a blender and blend until completely smooth, it’s that easy! Keep in mind once the batter is blended it will be very runny. You must let is sit for 15 minutes and give it time to thicken up! The oats make the batter very thick, so don’t worry just give it some time! Once its done sitting you’re ready to spread!

How do you eat this cookie butter?

My personal favorite way to eat this cookie butter is over a piece of toast with some fresh fruit and coconut shreds. Strawberries, blueberries, or raspberries work great! You can also get creative and add some other toppings such as hemp seeds, flax seeds, nuts, etc. whatever floats your boat! Add this cookie butter to your oatmeal bowls, smoothie bowls or eat it right off the spoon!

How do you store the cookie butter?

This cookie butter is best stored in the fridge in an air tight container. I usually use an old jam container or small mason jar. It will keep in the fridge for up to 5 days, if it lasts that long! It’s so delicious I usually eat it right out of the jar with a spoon. This stuff is addictive!

Substitutions & Additions

  • If you need an oil free version, sub the coconut oil for cashew butter. Other nut butters could be used as well but they will alter the taste quite dramatically. Cashew butter has a much more subtle taste.
  • You can sub the maple syrup for agave or any other liquid sweetener.
  • Any plant milk will work here. I used almond, but feel free to use whatever you have on hand!

Ingredients
  

  • 1 cup Oats
  • 1/4 cup Maple Syrup
  • 2 tbsp Coconut Oil or cashew butter if oil free
  • 1/4 cup Plant Milk
  • 1/4 tsp Cinnamon
  • 1/8 tsp Ginger
  • 1/8 tsp Nutmeg
  • 1/4 tsp Salt add more to taste

Instructions
 

  • Add all ingredients into a blender (I used my magic bullet and it worked just fine!). Blend until very smooth and the oats are pulverized.
  • Let the mixture sit to thicken for about 15 minutes. The mix will be very runny after you're done blending but let it sit for some time and it gets extremely thick and spreadable!
