This sheet pan vegan souvlaki dinner is the perfect quick and easy meal! It takes 10 minutes of prep time and works great for meal prep! This vegan chicken dish is lemony, salty, zesty and loaded with Greek flavor! You can serve it on a salad, a bed of rice or on a pita with my homemade vegan tzatziki recipe!

How to make your sheet pan vegan souvlaki
This vegan souvlaki recipe will be your new fav easy dinner! It takes less than 10 minutes of prep time and uses minimal dishes for easy clean up!
First chop up your veggies! You’ll need red onion, artichoke hearts, cherry tomatoes, garlic and olives. Slice your onions and roughly chop your artichoke hearts and olives!
Grab a large bowl and add in all of your ingredients! Mx it up well to combine and season with salt and pepper to taste.
Transfer your chicken mixture onto a baking sheet and bake at 425f for 30 minutes.
Serve your vegan chicken souvlaki with some rice, salad or on a pita with some vegan tzatziki!
Some tips from Steph
Swap chicken for tofu! If you are strictly whole foods plant based you can easily swap the vegan chicken for tofu! Just chop up 2 blocks of extra firm pressed tofu and toss it in 1 tablespoon of cornstarch so it can get nice and crispy then add it into the bowl with the rest of your ingredients!
Serve with my homemade vegan tzatziki! You can find the recipe here! In my opinion this is an absolute MUST for the dish and it is also very easy to make!
Make it oil free! To make this recipe oil free just sub the olive oil with vegan chicken broth or veggie broth.
Make it with even less dishes! If you want to keep the cleaning to an absolute minimum you could mix everything on the baking sheet itself then just pop it in the oven!

- On pita a pita or in a burrito!
- Over a bed of rice with some veggies!
- On top of a salad!
- On top of some crispy bread or baguette!

Sheet Pan Vegan Souvlaki Pita
Ingredients
- 568 g Vegan Chicken (about 4 cups) I used the brand Morningstar – I also like Sweet Earth Foods
- 1 can Artichoke Hearts Roughly Chopped
- 450 g Cherry Tomatoes Halved
- 1 Red Onion Sliced
- ⅓ cup Green Olives
- ⅓ cup Black Olives
- 7 cloves Garlic
- 3 tbsp Olive Oil
- 2 tbsp Balsamic Vinegar
- 2 tbsp Apple Cider Vinegar
- 1½ tbsp Oregano
- 1 tbsp Thyme
- Salt and Pepper
- Pita, rice or salad for serving

Instructions
- First gather all of your ingredients and chop up your veggies.
- Add everything into a large bowl and mix well to combine.
- Transfer your chicken mixture onto a large baking tray and bake at 425f for 30 minutes.
- Serve your vegan chicken souvlaki on a pita with some homemade tzatziki, on bed of rice, or on top of a salad!
- You can also store your souvlaki in the fridge for up to 5 days so you always have a healthy meal on hand!
