What makes these cookies healthier?

These chocolate peanut butter oat cookies are made with all wholesome ingredients. They are sweetened with maple syrup, a refined sugar free sweetener, and use oats in place of refined white flour, meaning they are packed with whole grains! The flax also provides omegas for brain health and the peanut butter provides healthy fats (make sure its natural peanut butter and not loaded with oil and added sugar!). Most peanut butter cookies use butter, white flour, and eggs, so these in comparison are much healthier!

What do these cookies taste like?

These cookies are so satisfying! They are dense and chewy and are packed with a sweet and salty peanut butter flavor! The texture of these cookies is insane and of course you can’t go wrong with the classic peanut butter chocolate combo! You can also try adding in different ingredients, if you’re feeling adventurous, try nuts, coconut flakes, raisins etc.

How do you store these cookies?

Store these chocolate peanut butter oat cookies in a container and leave on the counter. The container can be sealed or unsealed, it won’t make much of a difference as these cookies don’t tend to dry out very easily. They can be stored for up to 4 days on the counter, if they last that long!

What the heck is a flax egg?

A flax egg is a common vegan egg substitute used for baking. It can be made by mixing 1 tbsp of ground flax with 3 tbsp of warm water. Leave this mix on the counter for 10-15 minutes and it will thicken. This is used as our binder to make sure everything in the cookies sticks together. You can also use 1/4 cup of apple sauce in place of the falx egg. This is another common vegan egg substitute used in baking.

Substitutions & Add Ins:

  • Sub maple syrup for agave or any other liquid sweetener
  • Chocolate chips can be subbed for any other additions if you need a refined sugar free version. Try whole nuts, seeds raisins, coconut shreds!
  • You can sub your flax egg for 1/4 cup of apple sauce

  • Set your oven to 350 degrees f and make your flax egg by combining 1 tbsp ground flax with 3 tbsp warm water. Let the flax egg sit for 10-15 minutes to become thick. This is your egg replacement!
  • Mix your wet ingredients together in one bowl – the peanut butter, maple syrup, vanilla and flax egg.
  • Add your remaining dry ingredients on top of the bowl of wet ingredients – no need to use a separate bowl, save the dishes!
  • Separate into cookies and pat down to your desired shape on a baking tray. These will not change shape while cooking.
  • Bake the cookies at 350 degrees for 15-20 minutes
