Fluffy Vegan Sheet Pan Pancakes {gf & healthy}
These fluffy vegan sheet pan pancakes will be your new weekend brunch obsession! They are made with oat flour, and are gluten free, refined sugar free and dairy free! This is the perfect pancake recipe for when you’re feeding a big group of friends or family! It takes much less time and energy and less dishes too! They are made with wholesome ingredients and you can top the with any of your favorite pancake additions!

What ingredients do I need for my vegan sheet pan pancakes?
- Plant Milk
- Maple Syrup
- Apple Cider Vinegar
- Vanilla
- Oat Flour
- Baking Powder
- Salt
How to make vegan sheet pan pancakes
These may be the easiest vegan pancakes you will ever make! If you still can’t make pancakes without them sticking to the pan or burning them this recipe is for you!
Make your vegan buttermilk by mixing together your wet ingredients. Whisk together the plant milk, vanilla, apple cider vinegar and maple syrup then let it sit for 5 minutes to curdle! And just like that you’ve got yourself a vegan buttermilk! This is the trick to getting super fluffy vegan pancakes!
Next, mix together your dry ingredients in a separate bowl while the milk curdles.
Add the wet the to dry and mix! Whisk until most of the lumps are gone but be careful not to overmix as this can make your pancakes flat! Let the batter sit for a further 5 minutes! The batter will thicken slightly and puff up, to make for an extra tall pancake bake!
Pour the batter onto a greased baking sheet and bake at 425f for 15-20 minutes until the top is golden! You’ll know it is done when you can stab it with a toothpick and it comes out clean!

What makes this vegan pancake bake so fun is that you can totally customize the toppings and add on whatever you’d like! For this recipe I added on some strawberries, blueberries, bananas and vegan chocolate chips! You can split them into sections so there are distinct flavors, mix them all together, or add on some other toppings! Try some mixed nuts, coconut or fruit!
I love adding on a homemade blueberry sauce on top of ALL of my pancakes! It is a great way to sweeten your pancakes without all the added sugar from maple syrup! Simply cook some fresh or frozen blueberries over medium heat with some chia seeds! The blueberries will release their liquid & the chia seeds with soak some of it up! Drizzle on and enjoy!

Some tips from Steph
Any plant milk will work here but I find that the pancakes work the best when using soy or oat milk! The vegan buttermilk tends to curdle more with these milks, producing a fluffier pancake! But it will still work great with any other plant milk!
Don’t have oat flour? Make your own! Just toss some rolled oats into a blender and blend until the oats form a powder! I like to make a big batch and store it in my pantry so I always have some on hand!
Sub the oat flour for another type of flour! White, whole wheat, spelt, or gluten free flour will all work here, although I have not tried myself. Since oat flour is very dense in comparison you will probably need to adjust the amount of liquid.
The batter will thicken as it sits, so make sure not too leave out some of the plant milk! It may seem a little runny but after it sits for the 5 minutes it will thicken!
Make it added sugar free! You can sub the maple syrup with 3 pitted medjool dates! Just blend the dates with the plant milk until smooth, then mix with the ACV and vanilla!

Ingredients
Wet Ingredients
- 550 ml Plant Milk 2+¼ cups
- 3 tbsp Maple Syrup or 3 dates blended with plant milk for no added sugar.
- 3 tbsp Apple Cider Vinegar
- 1½ tbsp Vanilla
Toppings
- 1 Banana
- 3-4 Strawberries
- 2 tbsp Chocolate Chips make sure they are vegan!
- ¼ cup Blueberries
Instructions
- Mix together your wet ingredients to make a vegan buttermilk. Let the mixture sit for 5 minutes for the milk to curdle.
- If you do not want to use maple syrup, you can also blend 3 dates with your plant milk then whisk in the remaining ingredients, then let it sit to curdle.
- Mix together the dry ingredients.
- Add the wet to the dry and whisk until most of the lumps are gone. Be careful not to overmix as this will produce flat pancakes!
- Let the pancake batter sit for a further 5 minutes. The batter will thicken slightly and become puffy.
- Pour your pancake batter into a greased baking sheet then top with the blueberries, bananas, strawberries and chocolate chips (or any of your other favorite pancake toppings)!
- Bake at 425 for 15-20 minutes until the top is golden!
