This pumpkin baked oatmeal is fluffy, sweet and perfect for the fall! It is naturally sweetened and tastes like pumpkin pie for breakfast! These baked oats are made with whole grains and topped with a high protein vegan icing made from tofu! It is the perfect single serve breakfast to keep you fueled throughout the day!

How to make pumpkin baked oatmeal

Mix your ingredients in a small oven safe ramekin. Add more or less maple syrup depending on your desired sweetness! Flatten then top with a spoon then add on some extra chocolate chips.

Bake your pumpkin baked oatmeal for 35 minutes at 350f until the top is golden.

Make your vegan protein icing. Mix together one third of a cup vegan yogurt and one scoop of vegan vanilla protein powder. The protein powder will thicken the yogurt and make it the perfect icing consistency! You can use store bought yogurt or try my easy 5 minutes homemade yogurt recipe here!

Don’t have pumpkin spice? Make your own! Just add in some cinnamon, ginger, nutmeg and cloves! Use mostly cinnamon and nutmeg with a touch of ginger and cloves.

Make your own vegan yogurt with my 5 minute homemade vegan yogurt recipe here! It is made with tofu so it is extra high in protein! If you don’t want to make your own, store bought yogurt will work as well!

Adjust the maple syrup to your desired sweetness. I find the protein icing and chocolate chips add quite a good amount of sweetness, sometimes I don’t even add in the maple syrup!

Use any plant milk. Your favorite will do! I like to make my own plant milk at home using my Almond Cow! It is a plant based milk maker that transforms any nut grain or seed into creamy plant milk in under 1 minute! It is free from additives, preservatives and is completely waste free!

  • Mix in some chocolate chips, flatted with the back of a spoon then top with some extra chocolate chips.
  • Bake for 35 minutes at 350f.
  • While the baked oats are in the oven mix together your vegan yogurt and protein powder to make a high protein icing.
  • Once the top is golden take it out of the oven and top with some of your high protein icing!
