To prepare the tofu, start by pressing it to remove any excess liquid. Slice the tofu into strips, then toss them in cornstarch. If using an air fryer, arrange the tofu strips in a single layer and air fry at 400°F for 12-15 minutes until crispy and turned golden brown. Alternatively, bake the tofu in an oven at 400°F for 25-30 minutes. Once baked, toss the tofu in coconut aminos and set aside.

Prepare Veggies for the Filling

Julienne the carrots and cucumber into thin strips. Slice the avocado into thin slices and finely shred the red cabbage.

Assemble the Rolls

Fill a large shallow dish or plate with water. Dip one rice paper into the water for a few seconds. Place the soaked rice paper on a clean surface.
