How to make vegan french toast sticks

Start by choosing a nice dense bread. The bread makes all the difference in this recipe. A soft bread will be too soggy and the sticks may fall apart. It is best to also use stale bread if you have any as this leads to a more dense french toast.

Slice your bread into thick sticks. Make sure they are nice and thick so they do not fall apart!

Make the batter. These egg free french toast sticks use ground flax in place of eggs and the batter is just as simple to make. Grab a bowl and mash in one large banana. Add the rest of the ingredients on top and whisk to combine.

Dunk your sticks into the batter for 5-10 seconds ensuring the bread is fully coated.

Pan fry your french toast sticks in a touch of olive oil to ensure they do not stick. Fry over medium heat for a few minutes per side until golden.

Enjoy with a sprinkle of powdered sugar and dunk in some maple syrup!

Some tips from Steph

Use a dense bread. This will ensure the french toast sticks do not fall apart. Sandwich bread is not sturdy enough for this recipe. Try using a thick loaf and slice large sticks to ensure they do not fall apart.

Use stale bread if you have any laying around! Stale bread is a lot more dense and dry and works perfectly for french toast because it comes out much less soggy!

Make gluten free french toast sticks. You can make this recipe gluten free by using a gluten free bread!

Make vegan protein french toast sticks! You can make this recipe higher in protein by swapping the flax for vegan vanilla protein powder. You can also dunk your sticks in my high protein vegan icing recipe found here! Just add more liquid to make the consistency nice and dunk-able.

Swap the banana. If you are not a fan of banana you can replace it with 1/3 cup of pumpkin puree!

Air-fry your french toast sticks! Although I have not tried this yet myself I think it would turn out amazing popping your sticks in the air fryer! I would try air frying at 400f for 10 minutes flipping halfway through. Let me know if you try this so I can update the blog for future readers!

How to serve your vegan french toast sticks

  • With a sprinkle of powdered sugar!
  • Alongside some maple syrup for dunking!
  • With a cashew icing! You can make this by blending together 1/3 cup raw cashews, 1/2 cup plant milk and 3 medjool dates until smooth.
  • On a breakfast or brunch board with some tofu scramble, pancakes and more!
  • Dunk them in my high protein vegan icing recipe! Just add more liquid until you get a dunk-able consistency!
