Vegan Fried Rice
This is my absolute favorite vegan fried rice recipe! It has Indian and Asian flavors and can be cooked in under 20 minutes! The tofu packs this dish with protein and you can load a whole heap of veggies in as well! A perfect quick and easy meal that is sure to be a new addition in your rotation! This vegan fried rice also tastes amazing as leftovers, making a great option for meal prep!
What ingredients will I need?
- Basmati Rice
- Green Onions
- Garlic
- Carrot
- Bell Pepper
- Green Peas
- Corn
- Curry Powder
- Turmeric
- Sesame Oil
- Extra firm tofu
- Silken Tofu
How do you make vegan fried rice?
To make vegan fried rice start by cooking your rice in a pot with some water and salt. Then in a large pan sauté your green onions and garlic in a little bit of oil. Next, add in your veggies of choice and spices and cook for a further 5 minutes. Once the veggies are cooked add in the crumbled extra firm tofu, silken tofu and soy sauce and mix until everything is combined. Mix in your cooked rice, top with green onions and sesame seeds and your ready to eat!
A few important tips:
- Make sure not to overcook your rice or use too much water, this will make the rice too soggy!
- Don’t feel as though you need to use the same veggies in this recipe! Feel free to use anything that is in your fridge!
- If you don’t want to press your tofu crumble it with your hands and squeeze out the water over the sink.
- Silken tofu can be found in most grocery stores next to the rest of the tofu varieties!
What is the best way to store your vegan fried rice:
Store your vegan fried rice in an airtight container in the fridge. Let the rice come completely to a cool before packaging it or it may become soggy. This rice tastes great as leftovers making it perfect for meal prep! It will last in the fridge for up to 5 days!
Tofu Fried Rice
Ingredients
- 1 cup Basmati Rice Cooked in 1.5 cups of water + salt
- 4 Green Onions
- 4 cloves Garlic
- 1 Diced Carrot
- 1 Sliced Bell Pepper
- 1/2 cup Green Peas
- 1/2 cup Corn
- 1 tbsp Curry Powder
- 1 tsp Turmeric
- 2 tsp Sesame Oil
- 200 g Extra Firm Tofu, Crumbled
- 150 g Silken Tofu
- 2 tbsp Soy Sauce
Instructions
- Start by cooking your rice in a separate pot with water and salt. In the meantime start cooking the veggies in a separate pan.
- Sauté the green onions & garlic in a small amount of oil for 30 seconds then add in the remaining veggies, spices & sesame oil & cook for 5 more minutes.
- Mix in the extra firm tofu and silken tofu until combined, then add in the cooked rice and mix again until everything is incorporated.
- Serve with green onions and sesame seeds.
