Taco Pasta Recipe

The pasta that is the best of both worlds, half taco and half pasta. Perfect for when you can’t decide which one to have and can be whipped up in under 20 minutes! This is a quick and easy meal to throw together after a long day of school or work. But although quick, this meal does not skimp on nutrients or flavor! It is packed with whole grains, fiber, veggies and plant protein!

How do you make taco pasta?

Start by boiling water and cooking your pasta, the sauce will be done by the time the pasta it cooked! Sauté your onions for a few minutes, then add in your peppers and garlic and cook a little longer. Once that is done add all the other ingredients and cook until heated through. Add in your pasta and mix until combined. You can top the pasta with cilantro, avocado, jalapenos or green onions, whatever floats your boat!

Do you have to cook the tofu?

Tofu can actually be eaten straight out of the packaging! Tofu is technically not a raw food as it has been precooked before being packaged! For this recipe I recommend using extra firm tofu. Pressing is not necessary, although you can squeeze the water out of the tofu with your hands while you are crumbling it. This will ensure that the tofu is not too watery and will absorb all the delicious flavors! You can also cook the tofu in a separate pan if you prefer your tofu to have a harder texture.

Tips for making taco pasta

  • Add some extra flavor and top this taco pasta with avocado, cilantro, green onions, or jalapenos!
  • Make sure you use an extra firm tofu! A soft tofu will be too watery and make the sauce too runny!
  • If you don’t have the specific veggies in this recipe, don’t worry, you can swap out the veggies for anything you have on hand.
  • If you don’t have salsa you can use regular tomato sauce and use extra spices instead.
  • Use a whole wheat pasta to add extra nutrients!

Ingredients
  

  • 250 g Whole Wheat Pasta
  • 1 Onion
  • 5 cloves Garlic
  • 1 Bell Pepper
  • 1 can Black Beans
  • 1 cup Corn
  • 225 g Extra Firm Crumbled Tofu
  • 2 tbsp Taco Seasoning the ones that come in packets or homemade!
  • 1.5 tbsp Chili Powder
  • 2.5-3 cups Salsa

Instructions
 

  • Sauté your onion for 3-4 minutes until translucent. Add in the garlic and bell pepper and sauté for another few minutes
  • Add in the rest of the ingredients and cook until heated through.
  • Add in your cooked pasta then top with avocado, green onions, cilantro, or jalapenos!
