  • 1 tbsp olive oil
  • 1 white onion
  • 2 carrots
  • 2 stalks of celery
  • 5 cloves garlic
  • 13 cups water
  • 2 tbsp bouillon paste or 2 bouillon cubes
  • 1 cup orzo pasta
  • 2 bay leaves
  • ¼ tsp parsley
  • 200 g soy curls
  • cup tahini
  • Juice of 1-2 lemons
  • Large handful of chopped kale
  • cup chopped fresh dill

Instructions
 

  • Saute your onions, carrot, and celery in olive oil for 5 minutes, then add in your garlic and stir for one minute.
  • Add in your water, veggie stock, orzo, soy curls, bay leaves, parsley, and soy curls, and simmer for 5-7 minutes until the orzo is cooked through.
