These vegan protein brownies are next level! They are super chocolatey, fudgy, decadent and so easy to make! Each piece has 8 grams of plant based protein, making these the perfect high protein snack! You only need one bowl and 5 simple ingredients to make this recipe! These gooey protein brownies are also gluten free, dairy free, vegan and refined sugar free!

How to make easy vegan protein brownies

These gooey protein brownies are so insanely easy to make! All you need is one large bowl!

Mix all Ingredients Together: Start by adding your bananas to your bowl and mash well with the back of a fork. Add in the rest of your ingredients and mix thoroughly until combined. At the beginning it will look like there is not enough liquid but don’t worry just keep mixing it will come together!

Baking: Add your vegan protein brownie mix into a greased or lined baking tray. I usually use a loaf pan for these brownies. Use the back of a spoon to flatten out the brownie batter, top with your vegan chocolate chips, then bake at 350f for 45 minutes.

Let the Brownies Cool! This step is super important! You can eat the brownies right away however they will be very gooey and not hold their shape. Allowing them to cool for a minimum of 45 minutes lets them cook longer in the pan and then you will be able to cut the brownies into pieces. I usually cut them into 8 small squares.

If you are not a fan of bananas you can swap them for pureed canned pumpkin.

Add some liquid sweetener like maple syrup or agave if you prefer a super sweet brownie!

Let the brownies cool for at least 45 minutes after baking! They will continue to cook in the pan after they are out of the oven. If you take them out too soon they will be very gooey and not hold shape.

Do not swap for whey protein. This goes for any recipe using vegan protein powder. It has a totally different consistency and does not bake the same at all!

Swap the peanut butter for another natural nut or seed butter.

Mix in some nuts if you prefer your brownies with a bit of crunch!

Storing your vegan protein brownies

You can store these brownies in the fridge for up to 5 days! They last quite well and taste just as good, even on the 5th day! Make sure to store them in an airtight container!
