How to make vegan sweet potato brownies

Cook your sweet potato. I like to cook my sweet potato in the microwave because it is the easiest method and only takes about 5 minutes! Poke about 10-15 holes in your sweet potato and pop it into the microwave for 5 minutes, flipping it halfway through. You’ll know it’s done when you can stab it all the way through with a fork! If the microwave is not for you, you can also bake your sweet potato for 45 minutes at 400f.

Add your ingredients to a blender. Add everything into your high speed blender or food processor and blend until completely smooth. Scrape down the sides as needed to continue blending. The batter is quite thick and likely will not blend completely smooth. Just blend until all the large sweet potato pieces have been broken apart. Have a taste and see if it is sweet enough for your liking. Depending on the type of protein powder you are using this will affect how sweet your brownies are! Add some more maple syrup as needed.

Add your brownie batter into a baking tray and bake at 350f for 30-35 minutes. Then take out your brownies and let them cool completely to room temperature in the pan. The brownies will be very soft once they come out. If you try and cut them they will likely crumble apart, so make sure to let them cool completely!

Make your simple chocolate sauce by mixing together some cacao powder, maple syrup and plant milk then drizzle it all over your fudgy sweet potato brownie and sprinkle with some shredded coconut!

Don’t have chocolate protein powder? You can use a vegan vanilla protein powder instead! Just add in one extra tablespoon of cacao powder to give it a rich chocolatey flavor!

Do not use whey protein powder. Vegan and whey protein powders have completely different make-ups, textures and baking outcomes. They react totally differently when baking and cooking so in general it is never a good idea to sub vegan for whey protein powder in baking recipes.

Omit the protein powder. You can make these sweet potato brownies without the protein powder, just make sure to add a little less liquid. Protein powder is very absorbent so start with a 1/4 cup of plant milk and add more as needed. Your batter should still be quite thick.

Make it nut free by using a nut free butter such as sun butter or tahini!

Sub your flax eggs for a chia eggs or half a cup of apple sauce.

Use a different liquid sweetener. Any liquid sweetener will work here, although I do love the combo of maple syrup and sweet potato! Try using agave or monkfruit sweetener instead!

Instructions
 

  • Prepare your flax eggs by mixing 2 tbsp of flax and 5 tbsp of water in a bowl. Let sit for 5-10 minutes. Set your oven to 350f.
  • Cook your sweet potato in the microwave or in the oven. For the microwave, stab about 15-20 holes in your sweet potato with a fork then microwave one sweet potato at a time for 6 minutes, flipping halfway through. Stab it with a fork to ensure it is cooked completely.
  • Or bake at 400f for 50-60 minutes.
  • Peel the potatoes and add in 2 cups worth into a high speed blender or food processor.
  • Add in the rest of the ingredients and blend until most of the sweet potato chunks have been pulverized. The batter will be quite thick so scrape down the sides as needed. It will not blend completely smooth just blend until the sweet potato pieces are mostly pulverized.
  • Add to an 8×8 greased or lined baking dish and bake at 350f for 35-40 minutes.
  • Let the brownies cool completely in the pan before slicing or they will crumble apart. The brownies will continue to cook and harden in the pan as they cool.
  • Make the chocolate sauce by whisking together cacao powder, plant milk and maple syrup until smooth.
  • Once the brownies have cooled completely drizzle on the chocolate sauce and top with some coconut shreds.
