Rosemary Lemon Baked Lentil Chips {high protein recipe}
These baked lentil chips are the perfect healthy high protein snack! They are made with only 5 ingredients and are a much healthier alternative to deep fried potato chips! These chips are packed with 50 grams of protein and made with health promoting lentils! They are gluten free, vegan, grain free and perfect for sharing!
What ingredients do I need for my lentil chips
- Red Lentils
- Water
- Salt
- Lemon Juice
- Rosemary
- Olive Oil
How to make homemade lentil chips
This lentil chip recipe requires a few simple steps! Here’s how to make them:
Soak your lentils in water for a minimum of 3 hours or overnight. This will soften the lentils so they will blend smooth.
Blend up your soaked lentils with one cup of water, salt and any seasonings you’d like! I use my Vitamix for everything! Click here for the one I use!
Spread your blended lentil mixture onto a lined baking tray, making sure to spread evenly. Bake for 30 minutes at 350f.
Remove from the oven and cut your lentil flatbread into chip shaped triangles. Then pop the triangles onto a wire rack and bake again for 30-35 minutes until the edges are golden and the chips are nice and crispy!
How to eat lentil chips
These homemade lentil chips are the perfect substitute for pita, chips and crackers! Use them for your favorite dips, salsa, guacamole and more! They go great on vegan charcuterie boards as well!
Some tips from Steph
Store your lentil chips in an airtight container on the counter for up to 3 days. Do not store them in the fridge or they will become soft!
Spread Thin. Make sure to spread your lentil mixture thinly and evenly over the baking sheet otherwise the chips will not crisp up!
Switch up the flavor! I chose to flavor these chips as rosemary & lemon but you can add in any other flavor and spices you’d like!
Watch the chips carefully. Make sure to watch the chips carefully at the end so they do not burn. Some may cook faster than others. I usually take the thinner chips out first as they crisp up and leave the thicker chips in a little longer.
Make it oil free by omitting the oil!

Ingredients
- 1 cup Red Lentils soaked in water for a minimum of 3 hours
- 1 cup water
- ¾-1 tsp Salt depending on how salty you like them
- Juice of 1 Lemon
- 2 tbsp Rosemary
- 2 tbsp Olive Oil
Instructions
- Soak your lentils in water for at least 3 hours or overnight.
- Add your soaked lentils into a high speed blender with the rest of your ingredients and blend until smooth.
- Spread the mix on a lined baking tray in a thin, even layer.
- Bake for 30 minutes at 350f.
- Take out of the oven, remove the parchment paper then cut into chip shaped triangles.
- Place the triangles on a wire rack and bake for another 30-35 minutes until the edges are golden and the chips are crispy.
