High Protein Watermelon Ice Cream {Vegan – 3 ingredients}
This vegan watermelon ice cream will be your new obsession. It tastes like the watermelon jolly ranchers and is made with only 3 ingredients! It is perfectly sweet, packs a whopping 25g of protein and is dairy free! Made in under 10 minutes, this low calorie ice cream is the perfect healthy & refreshing snack or dessert!

How to make watermelon ice cream
This high protein watermelon ice cream is made from start to finish in under 10 minutes!
First freeze some watermelon overnight. I usually cut up an entire watermelon into cubes, add to a large container and store it in the freezer for whenever I want to make some ice cream. One large watermelon should make around 4 batches!
Add your ingredients to a high speed blender or food processor. I use my Vitamix for everything! I used to go through 2 blenders a year until I invested in my Vitamix! Blend until completely smooth! If using a Vitmaix or other high speed blender use a tamper to help push the watermelon into the blade. Stop as needed to scrape down the sides of the blender and be patient! The blending process should take about 5 minutes or so! If using a food processor stop to scrape down the sides as needed to move everything along!
Some tips from Steph
Omit the protein if you prefer your ice cream without it. You can blend with just the lime juice or add in some extra sweetener like coconut sugar or maple syrup!
Omit the lime juice if you do not have any or use lemon juice instead. I have made it without either and it still comes out nice, but I find the citrus adds a nice zest to the ice cream.
Try to make a watermelon ice cream popsicle! Add unfrozen watermelon, lime juice and protein powder into your blender and blend until completely smooth. Then transfer into popsicle molds and let them freeze for at least 6 hours!
Store in the freezer ahead of time for up to one hour. I would not recommend letting your ice cream freeze overnight as it takes quite a while to defrost and will be very hard.
What to do with leftovers? If you have some leftover ice cream you can store in the freezer but you will have to re blend it when you want to eat it again since it becomes so hard! You can also make your leftovers into popsicles using your popsicle molds!

Ingredients
- 4 cups Watermelon frozen
- 1 scoop Vegan Vanilla Protein Powder code "VEGANBABE" to save!
- Juice of 1 lime
Instructions
- Chop up your watermelon the night before and freeze overnight or for at least 6 hours.
- Add all of the ingredients to a high speed blender or food processor and blend until completely smooth.
- If using a blender use a tamper to push the watermelon down into the blade and occasionally stop to scrape down the sides as needed.
- If using a food processor stop occasionally scraping down the sides as needed.
- The whole blending process should take about 5 minutes.
