Easy Vegan Coconut Lemon Rawnola {5 minute recipe}
This coconut lemon rawnola is a game changer! It is so easy to make and it only takes 5 minutes and a blender. This is the perfect easy healthy snack to have on hand and you can use it to top your smoothie bowls, yogurt bowls, fruit bowls and more! It is also gluten free, dairy free and has no added sugar, but is as sweet as can be with the help of some good old dates!
Ingredients
- Medjool Dates
- Rolled Oats
- Desiccated Coconut
- Lemon Juice & Zest
- Vanilla
- Himalayan Salt
How to make rawnola
Rawnola is such a fun and easy snack to make and it is so simple! All you need is a high speed blender! I use my Vitamix for everything, it is so insanely strong it pulverizes anything! Here is the one I use!
Pulse your ingredients: The one and only step of this recipe is to add your ingredients to you blender and pulse. It’s that easy! Pulse until everything is in mostly uniform shape and can be clumped together in your hands. It should be sticky from the dates and resemble granola!
Careful not to over blend your rawnola! You want it to be crumbly but not blended to the point of becoming a date paste!
How to eat rawnola
There are so many fun ways to eat rawnola! Think of it as granolas jazzy cousin, anything you can do with granola you can do with rawnola!
Eat it as is! This rawnola is so sweet and delicious you can have it by itself as a sweet treat!
Use it as a topping for your fruit bowls, smoothie bowls, vegan yogurt bowls and more!
Make it into energy balls by clumping it together with your hands and forming balls!
Make a rawnola cereal by placing it in a bowl with your favorite plant milk!
Jazz it up!
I chose to make a coconut lemon flavor for this ranwola recipe but you can make any flavor you’d like! Just keep the base of equal parts dates and oats, then add in any flavorings your heart desires! Here are some other fun ideas!
Chocolate rawnola: Make it chocolate by adding in some cacao powder, and cacao nibs or vegan chocolate chips! You could even mix in some orange juice and zest to make a chocolate orange rawnola!
Pumpkin spice rawnola: Add in some cinnamon and nutmeg and pulse with some desiccated coconut, then mix in some pumpkin seeds and dried cranberry for an autumn flare!
Trail mix rawnola: Mix in your favorite nuts, seeds and dried fruit to make a trail mix flavor!
Storing your rawnola
This rawnola can be stored in an airtight container or jar for up to 3 weeks! You can store it in the fridge or on the counter!

Ingredients
- 1 cup Medjool Dates
- 1 cup Oats
- ¼ cup Desiccated Coconut
- Squeeze of Lemon Juice
- Zest of 1 Lemon
- ¾ tsp Vanilla
- Dash of Salt
Instructions
- Add all of your ingredients into a high speed blender or food processor.
- Pulse until all ingredients are a uniform shape and can be compressed into a ball with your hands.
- Careful not to over blend and turn it into date paste!
- Store in an airtight jar or container for up to 3 weeks.
