Healthy Pumpkin Breakfast Cookies {vegan & gf}
These vegan pumpkin breakfast cookies are sweet, simple and spiced with fall flavor! They are made with 5 simple ingredients and are gluten free, dairy free and refined sugar free! They are loaded with whole grains to keep you full throughout the day and are the perfect breakfast or snack meal prep!
What ingredients do I need for my pumpkin breakfast cookies?
How to make pumpkin breakfast cookies
These healthy pumpkin oatmeal breakfast cookies are made in one bowl and take less than 10 minutes of prep time!
Mix your ingredients in a large bowl until well combined! Then divide your dough into cookies and place onto a baking sheet! You should be able to make 8-10 large cookies, depending on large you make them!
Bake your cookies for 12-15 minutes at 350f until the edges are slightly golden.
Enjoy fresh out of the oven, with a glass of plant milk or save them for later!
Some tips for Steph
Jazz up your cookies by mixing in some additional ingredients! You can add dried cranberries, pecans, pepitas, chopped apple and more!
Use a different sweetener! Any liquid sweetener will work here such as agave or monkfruit sweetener! If you want to use a granulated sugar, just add in a few tablespoons of plant milk!
Make it into a breakfast bake! You can double this recipe and add it into a large rectangular baking tray to make a pumpkin breakfast bake! Just add in about a cup of plant milk and bake for 25-30 minutes!
If you don’t have pumpkin spice you can use a mix of cinnamon and nutmeg with a dash of ginger!
Make sure your chocolate chips are vegan! I like to use Enjoy Life mini chocolate chips but if I cannot find them I use bars of dark chocolate and break them into pieces! Dark chocolate is usually vegan!
Storing your pumpkin breakfast cookies
Store your pumpkin cookies in an airtight container in the fridge! They will last up to 4 days in the fridge! Perfect for meal prep!

- 1¼ cup Pumpkin Puree
- ⅓ cup Maple Syrup
- 1 tbsp Pumpkin Spice
- ¼ cup Chocolate Chips
Instructions
- Add all of the ingredients to a bowl and mix well until everything is incorporated.
- Divide the batter into 8-10 cookies and bake for 15 minutes at 350f.
- Enjoy right out of the oven or save for an easy breakfast meal prep!
