How to make vegan tzatziki made with tofu:

This vegan tzatziki is so simple to make and finished in under 10 minutes! All you need for this recipe is a blender and a grater! I always use my Vitamix for everything I am obsessed!

Add your ingredients into a blender. Add everything except for the cucumber and blend until completely smooth, then transfer your tzatziki into a bowl

Next, grate the cucumber. Use a cheese grater to grate the cucumber. Grate it into a kitchen towel then use your hands to squeeze out all the juices. This will ensure that your tzatziki will not be too runny!

Mix the cucumber into the tzatziki and enjoy!

Some tips from Steph

Make it soy free! You can make this recipe soy free by replacing the tofu with an unsweetened vegan yogurt! Any yogurt will work here as long as it is not flavored! You could also make a cashew cream base by blending raw cashews with water – about equal parts – until its nice and smooth!

Use extra frim tofu! Any type of tofu will work in this recipe! Just add more water to thin if the tofu you are using is more firm. Add water until the consistency it nice and smooth.

Make sure to strain the water out of your cucumber! This ensures the vegan tzatziki is nice and creamy as opposed to watery and runny!

Store your vegan tzatziki in the fridge for up to 5 days in an airtight container

Make a double batch! If you are feeding a family it is best to double the batch! My boyfriend and I can easily eat this in one sitting!
