How to Make High Protein Chocolate Peanut Butter Cups
Melt the Chocolate
Begin by melting your vegan chocolate chips. You can do this in the microwave at 30-second intervals or using a double boiler on the stovetop.
Mix in the Protein Powder
Once the chocolate is melted, add the chocolate protein powder.
Stir until the protein powder is fully incorporated and you have a smooth, chocolatey mixture.
Prepare the Peanut Butter Filling
Mix the PBFit Powdered Peanut Butter and water in a separate bowl until you achieve a thick, creamy consistency.
Assemble the Chocolate Peanut Butter Cups
Line a muffin tin with muffin liners. Spoon approximately 1 tablespoon of the chocolate mixture into each muffin liner. Use the back of the spoon to spread it up the sides and create a well in the center.
Add the Peanut Butter Filling
Spoon about 1.5 tablespoons of the peanut butter mixture into each chocolate-lined muffin liner.
Top with More Chocolate
Finally, spoon approximately 1 teaspoon of the remaining chocolate mixture over the peanut butter filling, using the back of the spoon to spread it evenly and cover the peanut butter.
Set in the Freezer or Fridge
To allow the chocolate to set, place the muffin tin in the freezer for about 10 minutes or in the fridge for approximately 30 minutes.
Serve Chocolate Peanut Butter Cups
Once the chocolate sets, your High Protein Chocolate Peanut Butter Cups are ready to enjoy. Peel away the muffin liners and savor every delicious bite.
Recipe Tips for High Protein Chocolate Peanut Butter Cups
Adjust the Sweetness: You can adjust the sweetness of the chocolate mixture by adding more or less chocolate chips.
Achieve the Right Consistency: Gradually add water to achieve the desired thickness when preparing the peanut butter filling. You want the filling thick enough to hold its shape but spreadable.
Chill the Cups: Allow the peanut butter cups to chill in the freezer or fridge for the recommended time to ensure the chocolate sets properly. This will prevent them from becoming too soft or melty when bitten.
Get Creative with Toppings: Sprinkle crushed nuts or coconut flakes on top of your peanut butter cups before they set for an extra layer of flavor and texture.
Store your cups in the fridge for up to 10 days!
