This lemon dill hummus recipe is the perfect summer recipe for beachside pool days or sharing with friends! It is light and refreshing, and packs a ton of plant based protein! This zesty hummus is a fresh twist on your typical hummus and tastes so similar to the delicious lemon dill flavor from Ithaca Hummus! You can whip up your own homemade lemon dill hummus in under 10 minutes! No additives, unnecessary ingredients or excess amounts of oil and salt!

How to make lemon dill humus

Vegan lemon dill hummus is surprisingly easy to make! All you need is your ingredients and a high speed blender or food processor. I use my Vitamix for EVERYTHING, it literally pulverizes anything I throw into it! This is the one I use!

Blending the Hummus: To make your hummus add all of your ingredients except for the fresh dill into your high speed blender or food processor. Blend up until completely smooth adding water or oil as needed to thin. Once smooth add in your fresh dill and blend for another 10-20 seconds.

Let the hummus sit: You can eat your lemon and dill hummus right away however it tastes best after sitting in the fridge over night. This gives time for the flavors to marinate together and the lemon and dill flavors really pop!

Serving your Hummus: To serve this hummus I like to add it to a small bowl or ramekin and drizzle it with a touch of olive oil and a dash of spice, using red pepper flakes or paprika. You can even add some fresh dill on top!

Substitutions & Additions

Oil Free: You can easily make this hummus oil free by simply omitting the oil and adding extra water or aquafaba instead (the reserved juice from a can of chickpeas).

Tahini Free: If you prefer your lemon dill hummus without tahini you can omit and add extra olive oil. It will not taste like your typical hummus but it will still have great flavor!

Swap the chickpeas: If you want to switch it up try swapping the chickpeas for white beans!

Add Pickles: If you are a pickle fanatic you can also add in some chopped pickles to make dill pickle hummus!

Use dried dill: If you do not have fresh dill you can use 1 tbsp of dried dill instead!

How to eat your lemon dill hummus

Hummus us such a versatile food and you can use it in many different ways! Here are some ideas!

As a pasta sauce: Use this hummus as a pasta sauce! Mix it into your cooked pasta and add some reserved pasta water to thin!

As a dip: Use your hummus as a dip for veggies, pita, crackers and more!

A spread for sandwiches: Hummus is one of my favorite spreads for sandwiches! It packs so much flavor and is a much healthier alternative to vegan mayo! Try it on your next panini or sandwich!

As a sauce or dressing: You can also use this hummus on the side of your Buddha bowls or thin it out with some water to make a fresh and creamy lemon dill dressing!

  • This hummus tastes best after marinating in the fridge overnight! The lemon, dill and garlic flavors really come out once they have sit for a few hours!
  • To store your hummus place it in the fridge in an airtight container for up to one week!
  • For ultimate creaminess you can also remove the shells from the chickpeas. This is WAY to much work for me but if you prefer a super smooth and silky hummus this could be a good option for you!

Ingredients
  

  • 1 can Chickpeas strained
  • ¼ cup Tahini
  • 2 tbsp Olive Oil omit for oil free and add in extra water or aquafaba
  • ¼ cup Lemon Juice
  • 2 tsp Lemon Zest the zest of 2 lemons
  • 1 clove Garlic
  • 1 Large bunch fresh dill or 1 tbsp dried
  • 3-4 tbsp Water to thin or aquafaba water
  • ½-¾ tsp Salt

Instructions
 

  • Add all ingredients except for the fresh dill to a high speed blender or food processor and blend until completely smooth adding water or oil as needed.
  • Once smooth add in your fresh dill with the stems removed and blend for a further 10-20 seconds.
  • Serve with some pita, chips, and sliced veggies. You can also drizzle a touch of olive oil on top and add some crushed chili flakes or paprika!
