How to make your quinoa snack bars

This is sure to be one of your favorite quinoa recipes! It is simple to make and insanely delicious!

First start by toasting your quinoa in a hot pan! You’ll want to heat a pan to med-high heat then add in your cup of quinoa. Use a spatula to toss the quinoa continuously over the heat. It will begin to pop like popcorn and once it turns a golden color remove promptly from the heat and place the popped quinoa in a small bowl.

Next add the rest of your ingredients into your bowl. For these quinoa crunch chocolate bars you will need maple syrup, coconut oil, chocolate flavored powdered peanut butter, almond milk and a pinch of salt. Mix to combine until all of the ingredients are well incorporated.

Next, transfer your mixture into a loaf pan lined with parchment paper and spread it out evenly to the edges.

Pop your loaf pan in the freezer for 1-2 hours for the mixture to firm up then slice it up, serve and enjoy!

Make it oil free! I have not tried making this recipe myself without oil but you should be able to swap the coconut oil with 1/4 cup of nut or seed butter. The fat helps the bars harden in the fridge and stick together which can likely be achieved by using a nut or seed butter!

Make it nut free! To make this recipe nut free you can try and swap the powdered peanut butter for half a cup of cacao powder and half a cup of vegan protein powder. I have not tried this yet myself but if you try it let me know so I can adjust the recipe for future readers! You may need to adjust the amount of plant milk needed depending on the protein powder you use! Also make sure to use a nut free plant milk!

Make a different shape! You can cut these quinoa bars into any shape you’d like or pop them into muffin tins for a bite sized snack!

Storing your crunchy quinoa snack bars

You can store your quinoa energy bars in the freezer for up to 3 months or in the fridge for up to 2 weeks! Just make sure to keep them in an airtight container so they stay nice and fresh!

Ingredients
  

  • 1 cup Uncooked Quinoa
  • 1 cup Chocolate Flavored Powdered Peanut Butter
  • cup Maple Syrup
  • ¼ cup Coconut Oil
  • ¼ cup Almond Milk
  • Pinch of Salt

Instructions
 

  • First heat a pan over med-high heat and add in your uncooked quinoa. Toast is for about 5 minutes until the quinoa starts to pop like pop corn. Once it is golden promptly remove it from the heat and transfer it into a medium sized bowl.
  • Next add in the rest of your ingredients on top of the popped quinoa and mix well to combine.
  • Transfer your mixture into a lined loaf pan and spread it out evenly to the edges with a spatula.
  • Pop your loaf pan into the freezer for 1-2 hours to firm up then slice into bars.
  • Eat right away or store them in the freezer for up to 3 months!
