How to make your stuffed baked apples
These healthy baked apples require less than 10 minutes of prep time and are made with only a few simple ingredients.
Start by coring your apples! You can do this a multitude of ways, but I cored mine using an ice cream scooper! Just pivot the scoop in circles to remove all of the core so there is a large hole in the center big enough for your filling! You could also do this using an apple corer, which I think would make it a lot easier! Then you could also save the scraps of the apple without the core mixed in.

Next, you’re going to mix up your oatmeal filling! Just grab a small bowl and mix your oats, nut butter, coconut shreds, maple syrup, coconut oil and cinnamon until well combined.
Stuff your apples with your oatmeal filling, patting it down to ensure all of that yummy stuffing fits inside!
Next, pop your stuffed apples onto a baking sheet and bake at 375f for 25-30 minutes until the oats are golden and the apples are nice and gooey. The apples will likely leak some of their juices onto the baking sheet, so if you’d like you can add some parchment paper underneath for easy clean up!
How to make a healthy vegan custard
These old fashioned baked apples pair perfectly with my healthy vegan custard and best of all, it takes literally 5 minutes to make! You only need 5 simple ingredients and a small pot.
First, grab your small pot and place it on the stove over medium heat. Add in your plant milk of choice, a splash of vanilla and some maple syrup for sweetness. Bring that to a gentle simmer and prepare your cornstarch slurry by mixing 0.75 tablespoon of cornstarch with 2 tablespoons of water.
Once the mixture is brought to a gentle simmer, add in your cornstarch slurry and whisk continuously for 2-3 minutes until it begins to thicken. Once you have reached your desired thickness you are ready to drizzle it on top of your stuffed baked apples!
I usually start to make the custard about 5 minutes before the apples are done, that way I can drizzle it on when they are nice and hot!

These apples are naturally sweetened with maple syrup and are completely dairy free! Instead of adding loads of butter we’re swapping that out for coconut oil to slightly crisp the oats! the fiber from the oats will keep you feeling so full and leave you feeling amazing!

Mix up the filling! This baked apples dessert is super customizable! Feel free to switch up the nut butter, add in some nuts or seeds, or even some dried fruit!
Make it oil free! To make this recipe oil free you can sub coconut oil for any plant milk of your choice!
Make it nut free by using a seed butter or nut free butter such as tahini or sun butter!
Omit the maple syrup to opt for a sugar free version! The apple itself becomes quite sweet while baking so you will not miss the sweetness at all!
Double the recipe and save some for later! I only made two apples but you can make as many as you’d like, as long as there is space on your baking sheet, go for it!

Oatmeal Stuffed Baked Apples with Healthy Vegan Custard
Ingredients
Stuffed Apples
- 2 Apples any flavor will work!
- ¾ cup Rolled Oats
- 3 tbsp Almond Butter or other nut or seed butter
- 1 tsp Cinnamon
- 2 tbsp Coconut Shreds
- 1 tbsp Maple Syrup
- 1 tbsp Coconut Oil or plant milk for oil free
Healthy Vegan Custard
- ½ cup Almond Milk
- 1 tbsp Maple Syrup
- ½ tsp Vanilla
- ¾ tbsp Cornstarch mixed with 2 tbsp water to make a slurry
Instructions
- Start by coring your apples. Slice off the top and remove the inside. You can remove the core with an apple corer then scoop out the flesh or use an ice cream scoop and rotate it around until the hole is big enough to fit the oatmeal filling.
- In a small bowl mix together the rest ingredients until the oats are well coated.
- Stuff your apples with your oatmeal mixture and pat it down so it all fits inside.
- Place your apples onto a baking sheet along with the tops and bake at 375f for 25-30 minutes, until the apples are soft and gooey and the oatmeal filling is golden.
- 5 minutes before the apples are finished make the healthy vegan custard.
- Add the plant milk, maple syrup and vanilla into a small pot over medium heat and bring to a simmer.
- Mix together your cornstarch and water in a small bowl to make a slurry then add your slurry into the pot, whisking continuously until it thickens.
- Pour your custard over your baked apples or top with some vegan vanilla ice cream!
