Vegan Blender Muffins

These vegan blender muffins are fluffy, light and perfect for meal prep! They are made with ingredients you likely already have in the house and are also gluten free, dairy free and refined sugar free! These muffins require minimal prep time and are a much healthier alternative to sugar packed muffins! They are perfectly sweetened with chunks of chocolate throughout! The perfect combo!

How to make vegan blender muffins

These blender muffins are so simple to make and require less than 10 minutes of prep time. You will need a high speed blender for this recipe! I use my Vitamix for everything!

Blend your wet ingredients. Add your bananas, plant milk, apple cider vinegar, maple syrup, vanilla and natural peanut butter to your blender and blend until smooth.

Add the dry ingredients. Once the wet ingredients are blended smooth add in the rest of the ingredients and blend again. Then mix in some vegan chocolate chips with a spoon. I use the sugar free ones from Enjoy Life!

Pour & Bake! Pour your batter into some greased or lined muffin tins about three quarters of the way to the top. Bake at 350f for 30-35 minutes until the edges are golden. Then let them cool completely to room temperature before enjoying.

Storing your blender muffins

You can store your vegan blender muffins in an air tight container in the fridge for up to 4 days!

Substitutions/Additions

Don’t like banana? Make your blender muffins without banana by using 1 cup of pumpkin puree or 1 cup of apple sauce instead!

Don’t have maple syrup? You can use any other liquid sweetener you’d like! Agave would work well here as well!

Jazz it up by swapping the chocolate chips with some fresh or frozen berries!
