Easy Vegan Protein Chia Pudding
This protein chia pudding is the perfect quick and easy healthy dessert or mid day snack! It is packed with protein, at 22 grams per serve and is so sweet and satisfying. This blended chia pudding is made with just 4 simple ingredients and can be made ahead of time as a meal prep! It tastes just like a chocolate pudding but is 100% heathy, vegan, refined sugar free and dairy free!
How to make protein chia pudding
This high protein chia pudding is so simple to make and only takes about 5 minutes of active prep time!
Add your ingredients to the blender. You will need to use a high speed blender or food processor for this! I use a Vitmaix! Blend everything smooth and add more plant milk as needed if the mixture does not move.
Divide & Chill. Once you have blended your ingredients together divide into ramekins you would like to serve them out of. Pop them into the fridge to chill for at least one hour so they are nice and cold!
Add toppings. I love to add some fresh fruit, desiccated coconut, or hemp seeds on top, but you can add any toppings you’d like!
Some tips from Steph
Make it sweeter by adding in your favorite liquid sweetener! If your protein powder is not too sweet you may need to add in some maple syrup or monkfruit sweetener!
Make it as meal prep! This chia seed pudding is great to make ahead of time and store in the fridge! You can eat it as a breakfast meal prep or as a healthy dessert.
Add some fun toppings! I always add fresh fruit and desiccated coconut but you can try adding some nuts, and seeds, or try some nut butter on top! For an extra chocolate kick add in some cacao nibs or vegan chocolate chips!
Storing your chia pudding
You can keep this decadent chia seed pudding on hand in your fridge for up to 3 days! Just make sure to keep a lid on it so the top doesn’t dry out!
