This vegan ceviche is going to be your new summer fav! It is so light a refreshing and super easy to make! For this recipe we are replacing the fish with hearts of palm, which has the same meaty texture – minus the meat of course! The ingredients in this recipe come together so well, making this ceviche balanced and crisp. It is seasoned with a simple lime and olive oil dressing, so the fresh ingredients can really shine!

  • Avocado
  • Red Onion

How to make vegan ceviche

Making vegan ceviche is so simple and requires no cooking!

Chop your veg! The first step to making your vegan ceviche is chopping your veg. I like to dice the tomatoes, bell pepper and mango into small cubes and dice the jalapeno and red onion finely. Then I chop the avocado into big chunks, because who doesn’t love a mouthful of avocado?! I also like to slice the hearts of palm. They typically come in a cylinder shape, making them quite easy to slice.

Mix it up. Once your ingredients have been sliced, add them all to a large bowl. Drizzle on your olive oil (or omit if oil free), squeeze on that lime juice and season with salt and pepper!

What the heck is heart of palm?

You may be asking, Steph, this recipe sounds great but I’ve got to ask, what the heck is hearts of palm? And have no fear I had no idea what they were for the longest time! Hearts of palm is actually a vegetable harvested from the inner core and growing bud of certain palm trees. These include the coconut, juçara, açaí palm, palmetto, and peach palm! They come packed in a can in these little white cylinders that have a meaty texture and are slightly salted. They are typically used in vegan cooking as fish substitute, making them the perfect addition for our vegan ceviche!

How to eat vegan ceviche

Although this vegan ceviche tastes amazing right off the spoon, it tastes even better eaten one of these fancy ways:

Used as a dip. Use some tortilla chips, rice crackers, or sliced cucumber to use this ceviche as a fresh summer dip!

Topped on tacos! This vegan ceviche is the perfect addition to any taco, burrito, or wrap! It adds a level of freshness similar to a mango salsa!

On top of some crostini. Try toasting up some French baguette and popping on some of this vegan ceviche! This may have to be my favorite way to eat it!

Ingredients
  

  • 1 can Hearts of Palm sliced
  • 2 Tomatoes chopped
  • 1 Large Avocado sliced into big chunks
  • ½ Red Onion finely diced
  • 1 Bell Pepper sliced into cubes

  • 1 Mango sliced into cubes
  • Large Handful Cilantro roughly chopped
  • 2 Limes
  • 1-2 tbsp Olive Oil
  • Tortilla Chips for serving

Instructions
 

  • Start by prepping your veggies. Chop them up then add them into a large bowl.
  • Drizzle with olive oil, squeeze on your limes and season with salt and pepper. If you are oil free you can omit the oil.
  • Mix well and serve with some tortilla chips or rice crackers for dipping!
