Sweet Potato Fries with Sriracha Mayo
Ingredients
For the fries
- 3 medium sweet potatoes
- 1 tbsp cornstarch
- ½ tsp olive oil
- Salt and pepper to taste
Healthy Sriracha Mayo
- ½ cup raw cashews
- 1 tbsp lemon juice
- 1 tbsp sriracha
- 2 tsp maple syrup
- 2 tsp tamari
- ¼-½ tsp salt to taste
- 2 tbsp plant milk
Instructions
- Slice your sweet potatoes into fries. You can make them any thickness you’d like; remember that the thicker you cut them, the longer they will need to cook.
- Soak your fries in cold water for at least 30 minutes or even overnight. This will help remove some of the starch and make them super crispy.
- Strain and pat dry your fries with a kitchen towel, then transfer to a large bowl.
- Toss in olive oil, cornstarch and season with salt and pepper to taste. You can also add on some extra seasonings if you’d like here!
- Spread your fries out in your air fryer and make sure they are not touching each other. Air fry at 400f for 12-15 minutes.
- If using the oven, spread your fries out without touching them and bake at 425 for 25-30 minutes, flipping halfway through.
- While your fries cook, prepare your healthy sriracha mayo by adding everything into your blender. Blend until smooth, and season with salt to taste.
