Sweet Potato Tortillas

What ingredients do I need for my sweet potato tortillas

To make these tortillas all you need is sweet potato and whole wheat flour! Yes, it’s that simple!

As for tools you will need a bowl and and spoon to mix and a non stick pan and a spatula for frying!

How to make sweet potato tortillas

Cook your sweet potato! I love to cook my potatoes in the microwave! It is so fast and efficient and only takes about 6 minutes! Just stab 20 holes in your potato with a fork then place on a plate and microwave for 6 minutes, flipping halfway through. You’ll know it is done when you can stab it all the way through with a fork.

Use the oven. If you don’t want to use a microwave you can also bake your sweet potato at 425f for 50-60 minutes!

Let the sweet potato cool slightly then peel off the skin. Use the tips of your nails and a fork to carefully peel away the skin, being careful not to burn your fingers on the steam! Mash the potato in a bowl with back of a fork.

Mix in your whole wheat flour with a spoon then transfer onto a clean cutting board and knead until thoroughly combined, then form into a circle.

Divide the dough into four equal parts then roll each quarter out on a floured surface using a rolling pin or bottle. Make sure the tortilla is nice and thin as it will expand as you pan fry it!

Pan fry your tortillas on a non-stick pan for a few minutes on each side until golden and you are ready to enjoy!

How to eat your sweet potato tortillas

Dunk into soups or curries! My absolute favorite way to eat these tortillas is dunking them into my favorite Indian curry! It is a great whole grain substitute for naan bread and is so filling and delicious! Try it with my Vegan Green Thai Curry Recipe or with my Chickpea Butter Chicken!

Use it as a wrap! You can use these tortillas as a wrap and stuff them with your fav ingredients! Add on creamy sauce, some crunchy veggies, and crispy tofu, and you’ve got yourself a filling and nutritious meal!

For dipping! These tortillas are great for dipping in hummus, guacamole, or in any of your fav dips or spreads! Try it with my homemade vegan tzatziki recipe or with my lemon and dill hummus recipe!

As a flatbread! What’s great about these tortillas is that they can be used for sweet or savory dishes! Use them as a flatbread and add on any toppings you’d like! I love using them for PB & J flatbreads or topping them with some hummus and veggies!

Make them into chips! You can cut your sweet potato tortillas into chip sized pieces and serve them alongside your vegan charcuterie boards or dips! You can also air fry or bake them after they are cut to make them nice and crispy!

Use a different flour! Oat, white, spelt, or gluten free flour will all work great in this recipe! Although I have not tried myself, almond and coconut would likely work as well!

Make the sweet potato ahead of time! You can bake a bunch of sweet potatoes ahead of time and keep them in the fridge for when you’d like the use them! You can also pre-prep the wraps the day of, but they do taste best right after they have been cooked on the pan!

Add in some seasoning! I actually prefer the simplistic taste of these tortillas with two ingredients, but feel free to spice them up with any add ins or add some salt for an extra boost of flavor!

Double or Triple the Recipe if you are feeding more than 2 people! This recipe makes 4 medium to large sized tortillas so make more if you are feeding more than 2 people!

Make a gluten free sweet potato tortilla! Make this recipe gluten free by replacing the whole wheat flour with gluten free flour or oat flour!

Ingredients
  

  • 1 medium Sweet Potato about 1 cup mashed
  • ¾ cup Whole Wheat Flour or white, oat, or spelt

Instructions
 

  • Cook your sweet potato in the microwave or in the oven. For microwave pierce the potato about 20x with a fork then microwave for 6 minutes on a plate, flipping halfway through. Test with a fork to see if it is cooked. If it pierces all the way through it is cooked! If using the oven bake at 425f for 55 minutes.
  • Let the potato cool enough to handle, then carefully peel off the skin using a fork. The add it to a bowl and mash it up using the same fork.
  • Add in the flour and mix until it comes together then transfer to a clean cutting board and knead until the flour is fully incorporated.
  • Form the dough into a circle then divide into 4 quarters.
  • Roll out each quarter out on a floured surface until is it very thin. You can use a wine bottle or vinegar bottle if you do not have a rolling pin.
  • Pan fry each tortilla in a pan over medium heat for a few minutes on each side until crisped. I recommend using more than one pan to make the process quicker!
  • Enjoy your tortillas with your favorite curries, soups and stews or use them as a tortilla or flatbread!
