Make it soy-free – Although this recipe uses tofu as a base, you can use soy-free tofu if you can find it! Some stores carry tofu made from lupini beans, lentils, etc, so you can use these if you can find them!

- ½ cup vegan chicken broth

- Juice of 1-1.5 lemons
- 2.5 inch cube of grated ginger
- Pinch of salt
- Rice
